Shrimp Lemon Pepper Linguini

Have made this several times. Love, love it. The last couple of times I have added 1/4 t of cayenne pepper to broth, lemon juice mixture before simmering. Quite a hit

Never Bitter Lemonade

Just made this again yesterday. Have made it several times. Living in Florida, I have this spectacular Meyer lemon tree that produces a ton of lemons (228 last year, but who's counting, noone but me). So I juice them, and freeze them into 1/2 cup blocks, pop them out of container and put into ziploc freezer bags to use all year.

Pretzel Turtles

Here's the perfect fit. Get mini waffle pretzels. Toast pecan halves 5 minutes (350). Place pretzel on parchment lined sheet. Place Dove (caramel) on top of pretzel. Place toasted half on top of caramel. Bake at 300 for exactly 4 minutes. Take out and press (gently) pecan into chocolate caramel to form turtle body. Toasting the pecans before makes them crunchier and definitely more tasty

Zucchini and Onion Pancake

Here's the trick to perfect zucchini pancakes much like potato pancakes. To 3 cups grated zucchini, add 1/4 cup Bisquick and 1 egg. I also saute some onions. Add salt and pepper to taste as well as Italian seasonings, and 1/4 cup of grated parmesan cheese.

Bean Soup

I have used this recipe for years and here's what I do to enhance the flavor. I always buy 1 pound of kielbasa and cut into small pieces and add to the soup. I also use 2 cups of chicken stock in exchange for some of the water needed. Try it. It's DELICIOUS

Blueberry Cream Muffins

Made these today and they are fabulous. Used 3 cups of berries, and added 2T lemon juice and zest. Goes great with blueberries. Also put cinnamon, sugar topping on them before baking.

Uncle Mac's Peanut Butter and Jelly Cookies

These cookies are great, but I've made a few changes. I used 1/2 cup white sugar, and 1/2 cup brown sugar. Put mixture in the fridge for 30 mins to firm up. Roll dough into small balls and put on cookie sheet. Make indentation in balls like you would thumbprint cookies. The dough will crack a bit, but you can easily fix them before baking. I baked them 15-17 minutes and my son-in-law who has Celiac loves them as does my husband.
