Hawaiian Fish with Pineapple

After alterations it was still just ok. I tried to find a recipe that incorporated Mahi Mahi and what I already had in my pantry, especially after reading some of the other reviews. So I used Spike seasoning instead of basil & thyme and less than a cup of lemon juice. I also placed the pineapple juice in with the milk. I probably won't make this again but I'm giving it 3 stars because it fine but wasn't something I'd add to my recipe box.

Rice with Black Beans

Yummy! I used tomato sauce (because I didn't have a can of stewed tomatoes) and used some chili powder and cayenne pepper to spice things up a bit. I also cooked the rice (jasmine rice) alone and topped it with the beans.

Ramen Noodle Salad

This has to be one of the least healthy salads I've ever eaten, however, it is so yummy! My husband always asks me to make it and our left-overs are usually gone within a day.

Juicy Thanksgiving Turkey

I gave this recipe to my mom who ended up having to make the Thanksgiving turkey without me. We were both so worried (neither of us had tried this recipe and she was so used to cooking the turkey her own way for many years). But it turned out SOOOO juicy! It was also gorgeous! The leftovers also didn't last long as they stayed juicy. Great turkey -- will be making this again next Thanksgiving!

Sweet Potatoes

What a wonderful, healthy dish and so easy to make. We've had it twice for Thanksgiving now and everyone raves about it. I would definitely recommend doubling the walnuts, brown sugar and raisins. It makes for a delectable, well-versified dish. I think it's going to becoming a tradition for our family!

Oatmeal MM Cookies

These cookies are yummy but I accidentally skipped putting the almond extract in until the end because the directions skipped it, I'm sure it should go in with the vanilla. Otherwise, I used softened butter instead of shortening and they turned out great! The four stars are for the miscommunication in the directions.

Tomato and Mozzarella Bites

So yummy and healthy! I cut the mozzarella balls in half and tore the basil leaves into decently large pieces. Although they take a while to piece together, they were a hit at a Christmas party -- hence the red, white & green! I could eat these all day long!

Summer Pepper Salad

A great alternative to other summer salads. I usually throw in a bit more feta cheese when I make this than what the recipe calls for and the leftovers last a while! Great healthy choice we'll keep for a long time to come.

Bella's Rosemary Red Potatoes

Very simple recipe and great side dish. Although, I mix everything in a bowl instead first and then dump it all on the pan. Not sure if it makes a difference but it was much easier and cleaner.

Herbed Corn

I've made this several times for my family and we love it. I usually triple the amount of dill weed because I love the taste. I'll throw in oregano (when I don't have italian seasoning) and some other simple spices, like coriander, when I want to change things up. It's a great basic I'll use for a long time!

Ground Turkey Casserole

Trying to get your toddler to eat anything is a challenge, but he loves this dish and so does my hard-to-please husband. I throw in additional tomato sauce as well as frozen spinach at times for a healthier meal. Otherwise, it's wonderful the way it is! I also took other people's tweaks and use other cheeses besides cheddar. Yum!

Sweetened Spaghetti Squash

One of my family's favorite meals by far (we eat a ton of pasta so this is a great alternative). I also printed and gave this recipe to my toddler's school teacher and they're making it this fall. I try to back off the brown sugar and add a lot of cinnamon.

Quick and Easy Chicken

This is a great, easy meal when you're out of ideas. I made this on the stove and took a walk with my son only to come back with the kitchen smelling amazing and the chicken was wonderful. I'd take it off the stove about 5 minutes earlier next time as the chicken was a tad overcooked, but that's my error. My husband also ate the leftovers before they actually became cold leftovers. Hooray!

California Chicken

This dish was okay. I used some friends as guinea pigs for dinner one evening and it turned out too dry. It could be my oven, but I doubt it. It wasn't a bad dish but I won't be cooking it again... :(

Baked Slow Cooker Chicken
