Creamy Italian Slow Cooker Chicken

Definatly rich and way too thick for a sauce. Needed to add milk and some chicken broth to thin it out so it could be used for a sauce over noodles. It was simple and tasted fine, nothing overly special.

Traditional Reuben Casserole

Cut the recipe in half and it still made plenty for my family of 5. Only thing I would do differently next time is maybe use a little less of the sour cream and thousand island mixture, I felt like there was too much dressing.

Cabbage Rolls II

I, like others, opted to cook in oven versus the slow cooker of r1 hour at 350. I did forget to cover pan with foil which made the cabbage rubbery (my mistake). The recipe was good, but the meat mixture itself needed more spicing up (onion powder, garlic, ect...) I also doubled the sauce as suggested, even with doubling, I probably would opt to triple next time.

Balsamic Bruschetta

This is the recipe I will use for bruschetta from now on. I didn't use the olive oil (my preference) and I also added some finely chopped onion (maybe 1/4 of a small onion). I melted mozz cheese on bread and spooned ontop.

South Carolina She-Crab Soup

This was a good base, but really it was bland without adding some of my own seasoning. I added Old Bay and some garlic salt. I cut down on the half and half (used 2% milk instead and some extra chicken broth. I used 3 cans of canned crab which I drained the crab juice into the soup. I was great with a little alteration.

Crispy Herb Baked Chicken

Great coating for chicken when some extra spices are added. I added onion powder, pepper, cayenne, italian seasoning. I also baked the chicken on a cooling rack so it wouldnt get mushy. Turned out great

Pasta e Fagioli II

Soup was good. I didnt have the proscuitto, so I subbed finely chopped ham (which worked out just fine. I also used canned great northern beans instead of the red because thats what I had on hand. I did have to add in some more sugar to cut down on the acidity (maybe thats because I used my own garden canned tomato juice, instead of store bought) and a few extra spices to taste, but all in all it was pretty good.

Southern Pulled Pork

I didn't brown the pork first (I dont see the point, if you're using a slow cooker) I just put the roast in whole with all the ingredients and let it cook. If you get a fattier cut of pork (like a butt roast) you don't need all that water either. I think I only used 1 cup of chicken broth for extra flavor. After cooking, I removed the fat and shredded the meat, I still thought it could use some extra seasoning, so I added some extra cajun seasoning to the shredded meat. It was great.

Cheesy Sausage Zucchini Casserole

I did have to use a little more rice simply because of all the extra liquid the tomatoes created when cooked ( I used a can of drained rotel). I used a spicy sausage (which ended up being too hot for the kids) but was great for me and my husband. My husband isn't a huge fan of zucchini, but he ate this without complaint.

Reuben Pizza

Awesome pizza (I forgot to use the caraway and it was still good). I used one of the store bought pizza crusts (which was easier and quicker than prebaking one) Also no need to measure the dressing, just cover the crust with as much as you would normally like with a reuben

Ultimate Shrimp Scampi

I doubled the recipe to feed a family of 5 and I still felt there wasn't enough liquid to adequatly cover all of the noodles. I did read someones review about adding some of the noodle water for volume, so I'll try doing that next time.

Slow Cooker Latin Chicken

I didn't brown the chicken first (didnt really see the point). I kept all the ingredients as is except for used only 1 can of black beans (thats all I had) I made rice on the side and put everything on top. The presentations isn't very pretty, but it tasted pretty good.

The Best Parmesan Chicken Bake

Alot easier than traditional chicken parmesean. The croutons and cheese almost made a crust on the top (which was a lot harder than I expected it to be). There was enough sauce to put on spaghetti noodles as well. Had good taste and was simple, so Im sure I'll make it again

only difference I made in actual preparation was I used a can of beef consumme instead of the beef stock. I made up the sandwiches as written, but then added some chipolte mayo I had made (which made them wonderful)

Cheesy Ham and Hash Brown Casserole

This is great. I cut the recipes in 1/2 and baked in a square 8 X 8 pan. Definatly worth using the cream of potato soup. I made exactly as written. Next time Im going to add in some onions and green chiles.
