Blueberry Buttermilk Coffeecake

I am now making this for the 2nd day in a row. I had started out with half a batch and everyone wanted more so I am making it again. The baking time was a little longer for me (about an hour) and I subbed almond extract for the vanilla and added a little cinnamon to the topping, otherwise I made as directed. I did try the trick of coating the blueberries with the flour and I didnt have any problem with sinking to the bottom. Awesome recipe!

Pizza Casserole

I made this exactly as directed except left out the green peppers for my kids. Prior to making I had thought about subbing the pizza sauce for pasta sauce. Im glad I didn't. I will definatly make this again.

Grands!® Cheesy Herb Monkey Bread

This tasted so good. The problem I found with baking this however is the biscuits on the top cooked too quickly and were a little harder than I would have liked after about 20 minutes of baking. I had to take them out to check if it was ready, the biscuits on the underlayer were still gooey. I think next time I will not layer any bread and just bake it for less. 5 stars if I wouldn't have had the problem with the cooking time.

Super Bowl Bites

My husband really liked these, me not so much, but I think thats just due to personal tastes. I flattened burger mix onto a small cookie sheet and baked at 350 for 15-20 minutes. Then I cut the meat into square pieces to fit inside the buns. I used Sara Lee dinner rolls for the bread and baked the sadwiches for a few minutes in the buns. Pretty easy.

Slow Cooker French Onion Soup

Thought this made very good french onion soup and it was so easy. I didnt cook onions ahead of time. I literally threw everything into my slow cooker. I had provolone and the gruyere cheese only so I used that. I think this was just as good as soup in a restaurant.

Graham Crusted Pork Chops

I liked the topping, it was a nice change from the usual coatings for pork chops. I did leave out the rosemary because I don't like it, but followed recipes otherwise.

Carrot Cake III

Really good. I added 2/3 cup of crushed pineapple and 1/4 cup of shredded cocnut as well. With the added liquid of the pineapple, I put in approx 1/4 cup more flour too. I decreased the confections sugar in frosting to 3 cups as I thought it was sweet enough . Will definatly make this again.

Buffalo Chicken and Roasted Potato Casserole

I simplified this as well. I did take the suggestion of using pre-made buffalo sauce (Hooters). Dumped halft of the sauce over the cubed potatoes prior to baking them. I also baked a few chicken breasts during the same time the potatoes were sitting in the oven. Cut them into cubes after cooked and used rest of buffalo sauce on them before mixing them together with potatoes. Then all I had to do was top with cheese and bake it to melt.

Fiesta Tater Tot® Casserole

Awesome. I didnt season the meat seperatly (didnt see the point). I just poured the whole package of taco seasoning into the soup mix (plus a little more) Only used about 3/4 of the bag of tater tots. Will definatly repeat.

French Breakfast Muffins

Alfredo Sauce

Great alfredo sauce! For a family of 5, I did double the recipe. I only had 1/2 the amount of cream needed, so I did add some flour to the melted butter initially to thicken things up a bit. Also didn't have both kinds of cheese, only parmesean (and I used a little more than called for).

Rita's Eggs Strata

I think this had really good flavor, but my kids didnt like the consistency of the casserole with the bread. They thought it was too mushy (and it was thoroughly baked). I probably will keep all the seasonings the same when I repeat, but will opt for making a casserole that just has eggs in it so they will eat it.

Napoleon's Banana Muffin

Most who have reviewed this has stated these muffins are really sweet and they are right. I believe I will also cut down on the sugar a little bit next time. I didn't have the cognac, but the taste of the spiced rum on its own was good. They did have a little bit more of a spongy cake like texture, but still good.

Tex-Mex Beef and Cheese Enchiladas

Loved it. I did use sharp chedder instead of the american due to personal preference. I also added a can of green chiles. Otherwise the measurements of spices were right on.

Linda's Lasagna

This lasagne is wonderful. I used my own canned tomato juice instead of store bought crushed tomatoes, so I dont use any extra water. I also stir in 2 envelopes of spaghetti mix with the tomatoes to thicken it up and add some extra falvor. I also double the meat and sauce amount.

Creamy Ranch Pork Chops and Rice

I baked this in the oven instead of in a skillet simply for ease. I mixed everything together and poured on top and covered with foil in 350 oven for an hour. The sauce ended up being really runny. I think when I make this next time, I will cut down or omit the milk. My kids loved the sauce.
