Real Hummus

I can't believe I had been spending big bucks for hummus! This is fast, easy, inexpensive and GOOD! My whole family, including my thirteen year old, loves it. I didn't have any tahini in the house so I substituted a little peanut butter and some ground sesame seeds to get the nutty flavor. I also added black olives to rave reviews. A definite keeper!

Black Bean and Salsa Soup

I LOVE this soup!! I can't believe something this easy is THAT good! I made it over the holidays for my vegetarian daughter-in-law and son and it was gone between the two of them! It's my "go to" recipe for my husband, as it's so diabetic friendly! I did try altering it a bit by doing white beans and salsa verde and, while it was good, the original recipe is perfection!

Broccoli Salad

FINALLY!! A broccoli salad recipe that doesn't call for GOBS of mayo!! I was looking for a recipe like the one we picked up at the deli counter but all of them called for a cup or more of mayo. When I saw this one, I had to try it and was SO impressed. The only changes I made was to use broccoli slaw and precooked bacon bits and added some toasted slivered almonds. Awesome recipe and one I've come back to many times!

Mini Cheesecakes III

Great recipe! I actually used it because I bought a 6" springform pan at a kitchen store and then couldn't find a recipe with the right proportions for it and this worked perfectly. My husband and I were able to have dessert for 3 nights but then didn't have 3/4 of a cheesecake looming in our fridge for the next 2 weeks. Perfect for the dieter that still want's a "little something" for a treat!

Southwestern Cactus Salad

Just what I was looking for! I had bought the cactus salad at our local hispanic grocery store and wanted to find a recipe to duplicate it. Perfect!! The only things I changed was substituted lime juice for the lemon juice. Yummy!! Thanks to all that said to rinse, rinse, rinse the cactus!

Sean's Falafel and Cucumber Sauce

Loved this recipe!! I did the prep work a little different. Put all the wet ingredients in a food processor first and mixed those together, adding one additional egg. Added the parsley and onion next and pulsed a few times. Added the garbanzo beans next and pulsed. Then by hand, added the bread crumbs to combine. Using a medium scoop, made about 12 patties and baked them at 400 degrees for 20 minutes on one side and then 5 on the next. Made the sauce with Greek yoghurt and a little garlic (no mayo) and served in pita breads with onion, tomato and spicy olive salad. So delish!! Tossed the leftover patties in quick salad the next day and they still were great!! Didn't even realize we were eating meatless!!

Greek Style Potatoes

OMG!! These aren't LIKE the potatoes you get at a Greek restaurant. These are BETTER!! I only changed the seasonings a bit, using only oregano (2 teaspoons) and salt and pepper (no boullion). Mixed up everything in a bowl, put it in the oven for an hour covered, then uncovered them for the last 20-30 minutes. I have never tasted such a flavorful potato! Had to throw myself between by husband and the pan so he didn't eat them all! Definitely a winner!

Health Nut Blueberry Muffins

I have to say that I never like the people that change a recipe a LOT and then review it but that's what I did and I LOVED it!! Changes I made: -Used 1 cup whole wheat flour and 1/2 white -Used 1/2 brown sugar instead of the 3/4 cup white -Didn't have oat bran or wheat germ so ground up quick cooking oats in the food processor to make a heaping 1/4 cup as a substituion for both -Didn't have buttermilk so made my own sour milk using 1 T vinegar and skim milk to total 1 cup -Didn't want the rest of my pint of blueberries to go to waste so used a heaping cup in the batter and then sprinkled the remaining ones on top. -Didn't have a banana so used a 4 ounce container of natural cinnamon applesauce. GEESH!! That's a ton of changes and they still came out AMAZING!! Loved the walnuts, love that they're not sugary sweet, love the nice chewy texture! And knowing that everything in there is a LOT better than most muffins is totally a bonus. Hubby said print this one and keep it safe!! Thank you for a great recipe!! Hmmm, wonder how they'd taste with raspberries...

Pumpkin Roll II

Awesome and simple recipe! Made one for work and people could not stop commenting on how great it was! Had enough pumpkin to make another that same night for my family and folks since there were NO leftovers from the first! Definitely worth making again and again!

I've made these before with a different recipe and actually prefer these. Totally yummy!! Made exactly as written and wouldn't change anything. No, they are not super sweet but the confectioners sugar makes up for that. Great way to use up leftover ricotta. I actually only made half a recipe and it was perfect!

Easy Seafood Fettucini

Made this the day before Thanksgiving and was pleasantly surprised. Very tasty! Cut the butter to about 2 tablespoons and didn't add any onion. Used skim milk and added an 8 ounce package of mushrooms that I sauted until cooked. Used 8 ounces of bay scallops and about 6 ounces of imitation crab. We were all very surprised at how "restaurant" it tasted! Warning though!! It makes a TON of pasta!! Could easily serve 6! Had lots of leftovers which is NOT a good thing the day before Thanksgiving :-)

Carne Guisada II

Great recipe with very little needed to change! Doubled the meat and the spices , tossed the meat with a bit of flour before browning but since I put it in the crockpot, kept the liquid (broth and water) about the same. Cooked for 8 hours on low in the crock pot and it was falling apart. Fantastic flavor but if you want a bit more heat, you might want to add a few chipotle's or cayenne as even with 2 serranos and 2 jalepenos, was pretty mild. Still SO worth making again! Served with tortillas, avocados and cheese. WONDERFUL flavor without a grill!!

Flounder Florentine

I made this tonight and with only a few changes, LOVED it! Used fresh spinach that I sauteed with a little garlic and olive oil. Squeezed all the liquid out. Made the sauce as in the recipe, only adding a couple of tablespoons more parmesan. Used one cup of sauce in the spinach and the other half cup to cover the fish (tilapia, by the way. Worked great!). Did use a bit of Old Bay on the fish, too. Baked at 400 for about 25 minutes to get a bit of browning. Seriously, made both my husband and I think it was a "restaurant" dish!! Will so definitely make this again!

Almond-Topped Fish

Awesome recipe!! I made it with flounder, only used about a fourth of onion (it's all I had on hand), seasoned it with adobo, paprika, garlic powder and dill and then used olive oil mayo. Absolutely fantastic flavor, beautiful browning and wonderful presentation. Do not hesitate to try this recipe!!

Black Beans and Rice

Pretty darn good recipe!! Didn't have onicons (HOW did that happen??) so used dried shallots. Used chicken broth and added a little salt. Also threw in a 1/2 a chopped jalepeno and one can of drained black beans into the pot at the same time. My husband said it tasted better than our favorite Cuban restaurant. Definitely worth trying!

Strawberry Oatmeal Breakfast Smoothie

While I didn't follow the exact recipe (aren't smoothies a formula??), I DID start to use the oatmeal trick in my smoothies. I actually take a quart jar, fill it with oats and then take my immersion blender and make it into flour and add that to the smoothie. A tablespoon of flax seed too and you have a GREAT healthy drink in the morning!

Slow Cooker Carnitas

Tried this last night and LOVED it!! I took the advice of previous reviews and increased the amount of the rub by about 50% with the exception of the cinnamon, which I kept at about 1/4 teaspoon and only used about a 1 1/2 cups broth. Next time I think I'll leave the cinnamon out as I wasn't thrilled with that flavor in my carnitas. When it came time for dinner, I chunked the roast into big pieces and then broiled it for about 5 minutes to get the edges crusty. AMAZING!! My family said it tasted better than the carnitas at our favorite Mexican restaurant and I agree! Served with tortillas, beans, cheese and avocados. YUMMERS!! Froze the leftovers for quesadillas!

Amy's Cilantro Cream Sauce

OMG!! This is an AMAZING sauce!! Made it to go with some grilled salmon and haven't stopped thinking about the other dishes I want to have with it! I did omit the celery salt and cumin, cut the salt a bit and the garlic powder in half. Also added a bit of grated lime zest and a seeded jalepeno pepper for a bit of heat. WOWZER!! Going to use the leftovers on soft tacos made with the slow cooker carnita recipe on this site. This one will be made again and again!!

Absolutely Fabulous Greek/House Dressing

Fantastic dressing and BETTER than the dressing at our local Greek restaurants!! Scaled it back to 10 servings and it was perfect. I know other reviews added sugar but that's why I LOVE Greek salads, the tartness of the vinegar. I did do a 1/1 ratio on the vinegar/oil (1/2 cup of each) and it was perfect. Also, used an immersion blender to mix it together and it formed almost a "creamy" texture and didn't seperate after 24 hours. DEFINITELY going to make again!!

Herbed Rice and Spicy Black Bean Salad

Really liked this recipe!! I used a pouch of ready made brown rice and zapped it in the microwave for about a minute to warm it up and take the dressing a bit better. Omitted the cilantro only because I didn't have any and celery because I'm not a big fan. Cut back the cayenne to 1/4 teaspoon. Added calamata olives instead of canned black olives and then added about a half a cup of halved cherry tomatoes. Wonderfull!! Perfect lunch salad!! Next time I'm going to reduce the olive oil to 2 tablespoons to reduce the fat conent a bit and add a minced jalepeno for a bit more heat but trust me, a pretty good recipe as is!
