Real Hummus

I can't believe I had been spending big bucks for hummus! This is fast, easy, inexpensive and GOOD! My whole family, including my thirteen year old, loves it. I didn't have any tahini in the house so I substituted a little peanut butter and some ground sesame seeds to get the nutty flavor. I also added black olives to rave reviews. A definite keeper!

Chocolate Orange Truffles

A HUGE hit for Christmas! Definitely chill well between steps and I put the balls in the freezer for 30 minutes before dipping in the chocolate, which gave them a very professional look as the chocolate coating firmed up immediately. This one is perfect for a busy cook as the steps can take place over the course of a couple of days. Double the recipe because everyone will want them!

Yakisoba Chicken

This is wonderfully simple dish with great tastes and spiciness. I would cut way back on the cabbage, though. A half a head came out to over 4 cups and about half would do. The soba noodles have a great meatiness to them that added to the dish. My whole family was impressed!

Coconut Macaroons III

After many trials and errors for the perfect macaroon, this is it! I have had more compliments on these cookies. I do melt about 1 cup of semi-sweet chocolate chips with 1 teaspoon of shortening and then drizzle them over the cookie using a plastic zip-type storage bag with the corner cut off. Very, very impressive. They store very well, also.

Korean Marinade

Super marinade!! Used it on boneless beef short ribs and it was perfect. I did omit the flour, cut back a tad on the sesame oil and, for a bit of spice, added a tablespoon of Korean hot pepper paste but red pepper flakes would do in a pinch. This one will definitely be used again and again!

Quick Chicken Marsala

One of the easiest and best chicken marsala recipes! The consistency of the sauce is one I kept trying to achieve but the golden mushroom soup delivers. I added about 8 ounces of mushrooms and a little Italian seasoning to the chicken but everything else was perfect. Add a bit of fresh parsley before serving and your guests will be most impressed!!

Chicken with Chipotle

Awesome recipe! I browned boneless, skinless chicken breasts and then added the sauce to finish cooking them. I used one chicken bouillion cube, lite sour cream and only one cup of milk but upped the number of chipotles to 5 for a nice "kick". Also, thickened the sauce a bit toward the end of cooking with a bit of flour and water. I would have liked leftovers but my husband, daugher and I ate every last bite. Easy, light and delicious!!

Pasta with Pesto and Scallops

Awesome recipe!! I cut back a bit on the olive oil I put on the pasta and didn't use any green peppers but added extra mushrooms and a little red pepper flakes. Also, used shrimp instead of scallops. This might make it to the top of my favorite pasta dishes list!! Yummers!!

Black Bean and Corn Salad II

Excellent salad!! I did cut the oil to 1/3 of a cup, used one can of cannellini beans and one can of black beans and used an anaheim pepper for a little more "heat" but everything else was perfect!! Everyone ate mare of the salad than of the main dish!! Definitely worth making again and again!!

Japanese Chicken Wings

Totally yummy!! I did follow prior users suggestions and cut the sugar back to 1/2 cup and added a generous teaspoon of garlic chili paste and it was perfect!! No need to fry the wings, either, as I broiled mine until they were a bit brown and then finished baking them in the sauce per the recipe. Definitely a keeper!! Even better the next day, if there are any left!!

Chewy Oatmeal Cookies I

Very good cookies!! I really liked the use of only one stick of butter. As to the baking time, as with ALL cookies, baking time will be effected by the size of your cookies, what kind of cookie sheet you use and how accurate your oven is, so don't really think that should be how you rate a recipe. I used a 1 tablespoon scoop, as opposed to a spoon, and got 60 cookies. I baked some on a dark, non-stick sheet and those only took 10 minutes. I made some on a shiny, "air" cookie sheet and those took 14 minutes to get brown but with either, the taste was GREAT!! I used orange essense cranberries and natural applesause and couldn't be more pleased with the taste and texture. These don't spread much, either, so kind of "patted" the scoop down a bit to get a flatter cookie. Definitely a good recipe for someone watching their fat and fiber!!

BUSH'S® Red, White and Beans Salad

Very good recipe. Fresh flavors and a nice change from a lettuce salad! I didn't add the bean liquid but added a bit more vinegar and more lemon juice for more freshness. Try to cool the oil before adding it to the salad as it did "darken" my basil a bit. Big hit with the family and will definitely make it again!

Fluffy Whole Wheat Biscuits

Wonderful recipe!! I was looking for a whole wheat topping for a turkey pot pie and this was just the ticket! Followed the recipe exactly and the dough was fantastic. Light and tender even with a whole grain. Will definitely add this one to my "favorites"!

Chocolate Pretzels

EASY and yummy!! Leave in the oven only a couple of minutes and then use the M&M to push down the top of the kiss. Then pop in the freezer for 10 or so minutes to harden. Perfect for a quick gift and a totally addictive snack!!

Magic Cookie Bars from EAGLE BRAND®

How can you not LOVE a recipe that you can put together on the morning of Christmas Eve and still have time for EVERYTHING else on your to-do list?? I've been making these since my first Christmas with my husband (29 years and counting!!) and they're still a winner!! Only suggestion is put the chocolate on LAST so it gets melty all over the rest of the ingredients. Quick and DELISH!!

Hot Artichoke and Spinach Dip II

Outstanding!! Made it with sour cream instead of mayo and think next time I will increase it to 1/2 cup as it never did get bubbly BUT the flavor definitely made up for that one small detail. Everyone LOVED it and said it was the best one they had ever had! I agree!!

LOVE this recipe!! I followed the other peoples suggestion of using lemon/lime soda instead of water and they turned out great! Not overly sweet, slightly bubbly and GREAT flavor!! Went together quickly and worth making again and again!

Jalapeno Pepper Appetizers

What a great recipe! I used center cut bacon and precooked it in the oven for about 10 minutes to lower the fat a bit. Added a bit of ranch dressing mix, like the other reviewers suggested but followed the rest of the recipe and they turned out great! I never saw an appetizer disappear so quickly!! Getting the jalapenos ready took a bit of time but can easily be done ahead of time. Definitely a keeper!!

Oven-Fried Pork Chops

Very, very good recipe!! I took the other reviews advise and dredged them in flour before the egg and used whole wheat ceasar croutons mixed with some plain bread crumbs in place of the stuffing mix. Totally yummy!!

Semmelknoedel (Bread Dumplings)

I'm Czech so know a thing or two about dumplings and these ROCK!! The addition of the sauted onions was awesome!! Be sure to let the bread soak for the 15 minutes so it's evenly moist and squishing all together is genius. I plan on doubling the recipe and tray freezing them so I always have them on hand!
