Low Carb Yellow Squash Casserole
Made this for a family get together. Everyone loved it even the young ones! Followed recipe to a T except for using a Tex Mex blend of cheeses which added a bit more flavor but honestly, didn't really need it. The crunch of the almonds was fantastic. Having made it once, I will definitely make again. It's very adaptable, and will try varying with differnent cheeses ( gruyere comes to mind) and more heat now that the young ones aren't around

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs
Grrreat! Falloff the bone, finger lickin good! So simple too! Wasn't sure if chili pepper was cayenne or not so sprinkled some chili powder and cayenne on the ribs before putting in foil. It added some added flavour to the ribs that only salt and peppers would? If you use only cayenne, it could be a bit spicy for people not used to heat. I loved the sauce as is, however again, depending on some, could be a touch tangy so suggest using cider vinegar instead. This a keeper that I will make again and again and again!

Balsamic Roasted Pork Loin
Gave it 5 stars due to it's simplicity and great taste. Did add 2 large crushed garlic cloves to marinade and added 2 sliced med onions to bottom of the pan before adding roast on top . The addition of the onions gives it added moisture and taste. If you use a decent quality balsamic vinegar, you shouldn't need to add any honey as some others have, otherwise I feel this would be too sweet. It's great as is!
