Easy Pancakes
I loved that I had all of the ingredients for this at home and didn't need to make a trip to the grocery store in my pajamas when my family requested pancakes one morning. As promised, the recipe is easy and tasty. I have made them a few times and they are great with a little vanilla as well.

My Favorite Pork Turkey Meatloaf
I had ground pork that needed to be used, so I thought I'd try halving this recipe and not using the turkey. It turned out great and my husband, who is typically the cook in our house and was skeptical of the all pork meatloaf, loved it. I didn't change much else except I used fresh spinach and put the veggies together in a food processor until they were pretty finely chopped. I also reduced the baking time to around 30 minutes.

Quinoa Tabbouleh
Excellent dish. This was my husband's first experience with quinoa and he loved it. I did tweak it a little by adding kalamata olives and feta cheese, but it was great without either as well. I also cooked the quinoa in chicken broth as others had suggested. I served it at a family dinner, with three young children and one teenager, and everyone thought it was a keeper.
