Pineapple Angel Food Cake I

I used the 2-bag mix and a can of chunk pineapple: First, I saved the pineapple juice and gave the chunks a whirl in the food processor. Next, I mixed bag-1 with the juice and just when it was starting to get thick, my mixer died! Booo :( so I just dumped in the processed pineapple, and gave it a quick mix. After that, I dumped in bag-2 all at once and mixed it a couple times with a whisk. I baked this in 2, 9x9 non-stick pans with NO GREASE. Came out awesome! Fluffier than I thought, too. I was expecting a lot of density from not being able to whip up the mix properly. Not the case! I should mention, I reserved about 1/3 c of the pineapple to add to the whipped topping. I forgot I had reserved it (duh!) and topped instead with strawberries. Nice and light (even the HUGE piece I ate). Will make again soon!

Ooey-Gooey Cinnamon Buns

BIG 5 stars. Just like my grandma's! I have been looking for a recipe for years that matched her's. I creamed the brown sugar and butter together then spread it on the rolled-out dough. Perfect. Not dry at all. I also left these in the fridge, soaking in the caramel for about 18 hours...was going to bake them for breakfast, but went out instead ;) I was nervous they would be soggy, but they were awesome! Will never make another cinnamon roll recipe.

Heavenly Chocolate Mousse

Delicious, but HEAVY. Could only eat a couple bites before putting down the spoon. Might use it to fill a cake, though. It's heavy enough to hold up under the weight.

Chicken Scallopini

Never tried this technique for cooking chicken I love it. The trick is to not flip it too much or the coating falls off. Learned that one the hard way.

French Bread

Love it! Rolled the dough into baguettes/hogie buns and baked them on my pizza stone. Perfect. I freeze the mini loaves and then just pull one or two out when I want them.

Cream Cheese Pound Cake III

OMG. Delicious. Sturdy enough to use for carving/sculpting. (think "Cake Boss"). They don't call it pound cake for nothing, this cake is heavy!

Raspberry Cream Cheese Coffee Cake

Husband LOVES this. I use piping bags for the cream cheese filling and preserves. I also bake this recipe split between 2 9x9 pans. I leave one on the counter for my man to gobble up and stick the other in the freezer for later.

Lemon Poppy Seed Loaf

Great basic recipe. I made muffins and topped with lemon glaze (lemon juice & confectioners sugar). My muffins fell, though, and I'm not sure why. Yes, they were baked all the way through.

Chocolate Rum Balls I

I love these. The only rum I had around was Sailor Jerry's 92 proof spiced rum. The bite was a little bit much, so I tossed in a few tablespoons of shredded, sweetened, coconunt. Perfection!! The coconut fibers left in your mouth deliciously mellow the boozy taste that lingers after the rest of the rum ball is gone. Can't believe I've never made these before...

Bacon Cheese Muffins

These muffins were tasty, very easy to prepare, and took almost no time to bake. I omitted the lemon pepper (didn't have any) and just used black pepper instead. I used thick-cut bacon from the butcher but next time will go for the thinner stuff that crisps up a little faster. In mixing the ingredients together, I first mixed all the dry ingredients in one bowl and all the wet ingredients in another. I tossed the bacon and cheese in the dry mix to coat. After that, I dumped the wet into the dry and used a wooden spoon to combine until just mixed. Keeping the stirring to a minimum kept my muffins light and fluffy. Would make again with more cheese and more bacon! Yum!

Sweet Dinner Rolls

These really got huge during the rising process!They tasted a little too yeasty for me but looked pretty on the table. I might try a little less yeast next time or try to rise them in a cooler place for a little less time.

Libby's® Pumpkin Roll with Cream Cheese Filling

Yum! I had to arm wrestle my husband for the last bite :) I boosted the spice with some additional pumpkin pie spice and served with whipped cream (the real kind you whip up). I wish I would have remembered to sprinkle the towel with the powdered sugar before I rolled the cake to cool. Everything came out perfect, I just had to be really careful in unrolling the cake before filling.

Alfredo Sauce

Added salt & pepper, a can of crab and chopped up cooked shrimp...yummy! Also used whipping cream instead of heavy cream. Great basic alfredo sauce.
