Pineapple Angel Food Cake I
I used the 2-bag mix and a can of chunk pineapple:
First, I saved the pineapple juice and gave the chunks a whirl in the food processor. Next, I mixed bag-1 with the juice and just when it was starting to get thick, my mixer died! Booo :( so I just dumped in the processed pineapple, and gave it a quick mix. After that, I dumped in bag-2 all at once and mixed it a couple times with a whisk.
I baked this in 2, 9x9 non-stick pans with NO GREASE. Came out awesome! Fluffier than I thought, too. I was expecting a lot of density from not being able to whip up the mix properly. Not the case!
I should mention, I reserved about 1/3 c of the pineapple to add to the whipped topping. I forgot I had reserved it (duh!) and topped instead with strawberries. Nice and light (even the HUGE piece I ate). Will make again soon!
