Milly's Oatmeal Brownies

This is a keeper! I love the oatmeal taste. I used coconut oil instead of butter and white whole wheat instead of all-purpose flour. As optional ingredients I added a cup of shredded coconut and about a cup of Ghirardelli 60% Cacao Bittersweet Chips. The taste and texture were wonderful; dense and not too crumbly for me. I cannot wait to make this again. I am probably going to add ground flaxseed and experiment with coconut flour.

Best Buttercream Frosting

I felt like a real gourmet! The flavor was fantastic. The texture really comes together. Read the reviews & follow the directions. Be patient. I was a little skeptical, but it worked great. One reviewer gave a temperature reading that was helpful for cooling the flour/milk mixture - 85 degrees. I also made sure I stirred the mixture as it cooled. I beat the butter and sugar for a good while (watched Downton Abbey finale) as the flour/milk cooled. The recipe as listed made enough to frost a 2 layer, 9" round cake with a bit left over. I paired the frosting with Heavenly White Cake submitted by Carol on Allrecipes.com Love this site & the reviews - so helpful for me.

White Cake Frosting I

I put this on a white cake. It was beautiful. I followed the suggestions for using part shortening, part sugar. Next time I will go w/ 1/2 c butter & 1/4 c shortening; hoping for a better flavor. I did not have the butter buds on hand. That may be the key in the flavor.

Baked Oatmeal Squares

I like the simplicity of the recipe. After reading several reviews I made the following modifications: applesauce instead of oil, 3/4 cup honey instead of sugar, added 1 small chopped up apple, and 1 T ground flaxseed. I also added 1/3 cup whole wheat flour. I was concerned about the moisture content. I doubled the recipe and baked it in a 9x13 pan. The texture and firmness was excellent. Next time I would add more cinnamon and a dried fruit (cherries or cranberries).
