Whole Wheat Blueberry Pancakes
Very good... but needed more milk... used real sugar.. organic but ruin whole wheat pancakes with artificial sugar? Crazy... could have used maple syrup, agave or something else natural

Roasted Cauliflower and Leek Soup
Didn't have cauliflower but had plenty of broccoli on hand so used that... looking for something to use up my broccoli and leaks (get organic produce delivered). Didn't have cream or condensed milk on hand as other had said but did have coconut milk... added a can of chicken broth pureed it... doubled the chervil and left out the butter next time will try leaving out the flour to lower the carbs. Will make w/ skim condensed milk or coconut milk whichever I have on hand. Also used himalayan salt instead of kosher... loved the roasted cauliflower and bumped up the garlic to 3 cloves it was awesome.

Pickled Beets
This got me to eating beets.. I've made a few adjustments... add a cinnamon stick for each jar and also increase the cloves. I'm not canning them so I just put the whole peeled beets in hot water and then slice after they get soft. I usually am doing about a 26 oz. jar at a time.. tonight I'm making 2 as my produce co-op brought me beets 2 weeks in a row. Been great on a salad w/ goat cheese, pecans and mixed greens and a raspberry vinagrette - yummy!
