Mom's Applesauce Pancakes
This is an awesome recipe! I also used the Krusteaz pancake mix and made just as written here. From one of your videos I decided to use the end of a stick of butter to rub the spot where each pancake goes for no stick. Delish! Also, I diced up a Granny Smith apple and sauteed that with a bit of cinnamon and brown sugar and a drop of lemon juice. Sprinkle them over the pancakes before adding real maple syrup. 375 degrees and cook 'til bubbly on one side....don't be afraid to wait for that or they'll be doughy inside. Flip and cook until they aren't puffy anymore. I did add a bit of extra milk (just tiny splash) to the batter after it sat for a minute because the batter was quite thick.

Spinach Quiche
This is the best recipe...my first quiche. I did listen to reviews, used 2T. butter, 2 cloves garlic, a couple of diced button mushrooms cooked near the end with the onions and garlic, and 3/4 cup milk...perfect! I didn't need quite all of the cheese on top and used an Orononoque Orchards deep dish prepared frozen pie crust. I added a few pieces of julienned sun-dried tomatoes from a jar cut up fine. I thaw my spinach a bit and then leave it overnight in a sieve over a bowl to drain and then squeeze out the excess water in a towel before using. This was my first quiche and it was awesome! Friends at work loved it. It freezes very well and is great reheated in the oven. The crust even stayed crispy. For new cooks (and I am not a new cook)...PLEASE, put a cookie sheet under the frozen pie crust when you cook the quiche or you will have happen what just happened to me when I made it the second time....it bent in half over my oven door when I went to put it back in the oven after 15 mins!!!! What a mess. I should have known better. Also, don't be afraid to use whatever cheeses you have for the cheddar. For half of it I used a four cheese shredded blend that I already had and then the other half was sharp. You must use some sharp for flavor I think. Make this...your family or friends or just you if you are trying to make ahead some meals will just love it. After thawing pie crust for 15 mins, brush pie crust w/egg wash and cook 7 mins.for crispy crust. Annalou18 helped me. Thanks!
