Vegetable Medley I

Needs a lot more herbs. But turned out great! I used olive oil spray, a little on the pan and some directly on the veggies. I added 1 tsp tarragon, 1 tsp Italian seasoning, 3 bay leaves, 1 tsp cilantro, 1/2 cup moz cheese, 1/2 cup chopped asparagus, 2 tsp (chili paste from the publix produce section so good). I drained the tomoatoes and cooked it all stovetop. Great healthy side dish!

The Best Vegetarian Chili in the World

I like a thick meat chili so I used this as a base and added ground sirloin and sirloin chunks. I also used the canned crushed tomatoes with jalapenos. Yummy!

Sweet Potato Oranges

Exceptional presentation! They looked beautiful on the table. I brought them to my boyfriends family for Christmas dinner. Many of his family member are great cooks. They knew I spent a good amount of time on the preparation. I juiced and gutted the oranges the day before in front of the TV, I was done before I knew it. I used others advice and halved the sugar. I didnt know how to grate an orange peel so I just threw one that i had made a hole in into the foot processor. The sweet and bitter flavors went very well together. I didnt make the topping. Instead I just placed the pecans on top and sprinkled brown sugar on them before I baked them. Was amazing. I will make them again for a special occasion

Green Bean Artichoke Casserole

We used an extra can green beans, 1 tbsp fresh garlic, 1 tsp italian seasoning, 1 cup breadcrumbs, half the cheese, artichoke w the juice and half a jar of roasted red peppers w its oil. It was pretty good w chicken. I would make it again for something different but it wont be a signature dish.
