Sopapilla Cheesecake Pie

Amazing!! This was so delicious, I got many compliments. Also, it was so EASY to make, I had almost everything on hand. The only thing I will change next time is to add less butter.

Dijon-Tarragon Cream Chicken

Amazing!! SO EASY and QUICK!! Breaded the chicken like suggested by other people, and sauteed mushrooms before making the sauce. Served over mashed potato's. Tasted delish, and my boyfriend LOVED it!

Baja Fish Tacos

I was looking for a version of fish taco's that were not fried, and these were perfect!! I did add some lime juice and zest to the sauce, and I had to additional cayenne pepper to the sauce and fish since I like things spicier. But, overall, these were perfect! I would definitely make again!

Baked Salmon Fillets Dijon

This was delicious, me and my boyfriend loved it. He actually complimented me a few times during the meal! I did change a couple things. I added some low-fat mayo to the dijon mustard, and then seasoned the salmon with salt, pepper, and dill before putting on the mustard-mayo mixture. I also left out the butter, but sprinkled some Parmesan cheese over the breadcrumbs. To complete the meal I added asparagus to the oven after putting in the chicken, popped some instant brown rice in the microwave, and it was one easy, quick, tasty meal!

Creamy Cajun Shrimp Pasta

Great! Just spicy enough, and very creamy. I added sauted mushrooms and red peppers before the shrimp. My boyfriend loved it! I will definitely be making it again.

Kale Puttanesca

I was a little surprised how easy this was to make, and it tasted great! I did double the amount of kale, and used a can of anchovy fillets in olive oil with capers. I used some of that excess oil to saute the garlic and red pepper flakes which added a nice anchovy flavor without all of the extra salt. Some people commented that this was very salty, but I think using anchovies in oil tempered the saltiness, so I will definitely make it that way again.

Sausage and Bow-Tie Pasta Florentine

This was pretty easy to make and tasted great. I ended up frying the sausage, and then I added some baby bella mushrooms too. I would definitely recommend adding more sauce, the noodles soak it all right up, but other than that it was great.
