Chicken Parmesan

Made this recipe as is and it was absolutely delicious. The chicken was tender and flavorful. My husband despises chicken yet has been asking for me to make this recipe again. This dish was easy to make and was quick to make too. Clean up wasn't too tough either I didn't have too much mess after breading.

Thai Chicken Curry with Pineapple

Tastes just like my favorite Thai restaurant's red coconut curry. I made it for my Dad and he loved. It's not overall spicy so my toddler eats it up no problem. I serve it over jasmine rice that I cook up in the rice cooker while I am making the curry. I have made this recipe a dozen times now. It is very easy recipe with very little mess so clean up is easy. I never would imagined it would be so easy to make curry. Sometimes I add an extra tablespoon of curry paste to spice it up a bit more. The only change that I make per another reviewer is I add about 1 1/2 tablespoons of cooking oil to the curry paste and curry powder and cook up the mixture until it is fragrant.

Brown Sugar Meatloaf

Easy, Easy, Easy to make! This is exactly the way I remember meatloaf growing up. My toddler loved it he ate two large slices and he's not a meat eater. My husband was very pleased by the flavor and I was pleased by how easy this recipe is to make. Also a very budget friendly recipe.

Kim's Prime Rib

Amazing! Easy, Delicious, and Minimal Mess! I have used this prime rib recipe for both Thanksgiving and Christmas this year. Thanksgiving was my first time making any sort of prime rib. This recipes is great for a beginner! Everyone loved it! It was so easy, just prepare the marinade and cook in the oven. I only had to use one bowl and a roasting pan. Very little mess made. Both times the roast came out very tender and juicy with lots of flavor. My only suggestion is to be sure that the oven safe pan you are using fits the size of the roast you are serving so that most of the roast is covered by marinade. My only complaint is that it takes up most of my oven for several hours which means I either need to prepare my side dishes ahead of time or I need to prepare stove top side dishes. The browning sauce is a little tricky to find. At our local grocery store I found it by the other sauces but they only had one choice so it was hard to locate. It was on the isle with the BBQ and Worcestershire sauce.

Boston Baked Beans

Super easy to make baked beans and they taste great too! My family loves these baked beans. The only change that I made was leaving out the onions and adding some onion powder. I was kind of worried when I took the lid off at 2hrs because of the amount of liquid but after another 2hrs of cooking they thickened up nicely.

Southern Potato Salad

Wonderful and easy to make potato salad recipe. I have made it twice now and followed the recipe with no changes and everyone loved it. It tasted good both served warm and straight out of the fridge a day later. I used my mother's homemade sweet relish which made it even better. It does not take 2hrs to make as it says above. It only takes about 20 minutes to whip it up.

Roasted New Red Potatoes
