Amazing Mexican Quinoa Salad

I love quinoa salad and when this one had the word mexican in front of it I figured it couldn't lose. I was right. It is ridiculous good! Of course I made changes because: don't like corn in salads, don't like raw garlic in salad(so I used garlic powder), didn't have pinto beans -so I used black beans. Oh, and I am addicted to chipotle chili powder so I used a smidge of that for part of the chili powder. It is a great base salad recipe to work your own little personality into!

Pan-Seared Chicken Breasts with Shallots

This recipe has become a regular favorite for my family. I originally chose it because I happened to have some dried shallots in my cabinet and I thought I could substitute them. They worked great. Just a couple of teaspoons, and they are all chopped and ready. Such an easy recipe and it wins praise every time! This would be a great company dish, the taste is very gourmet!

Italian Butter

I wanted an easy appetizer to bring to christmas eve with the family. And the budget is low. Our local grocery makes a very good baguette that you finish baking yourself, so I bought a couple of those and brought this mix and some olive oil. I tore the bread in chunks on a large platter surrounding a small plate of the oil dip .It was gone in no time!

Black Bean and Salsa Soup

It wasn't amazing or anything but it took me all of 5 minutes and about a dollar and a half to make,so I gave it 4 stars for cheap, easy and healthy. And pretty good with the sour cream and some tortilla chips and cheese. And very little clean-up.

Ground Turkey Soup

I tried this soup because I was looking for a soup recipe to use up some ground turkey, which my husband wouldn't eat. I thought he might not mind it in soup. It sounded a little too simple to be good but I made it as written. Having used barley before I assumed the 1 cup must mean already cooked barley which worked out great. I couldn't resist throwing in a bit of dried onion and a clove of garlic whole. I made it the night before and reheated it with dumplings. We finished up the leftovers tonight and my hubby said ,"you have to make this soup again! In thirty years he has never said that before!

Norwegian Christmas Bread

I've been making julekage for years. I'm never quite happy with my recipe, but, forget by the next year and make the same recipe all over again before I remember. This year I remembered to look for a different recipe. I made this one in my bread machine pretty much as given, though I know I like a little more salt in my bread so I put in 1 tsp. I held out 1/4 cup of the flour and didn't end up needing it. It turned out wonderful. Just the flavor I was looking for!
