Amazing Mexican Quinoa Salad
I love quinoa salad and when this one had the word mexican in front of it I figured it couldn't lose. I was right. It is ridiculous good! Of course I made changes because: don't like corn in salads, don't like raw garlic in salad(so I used garlic powder), didn't have pinto beans -so I used black beans. Oh, and I am addicted to chipotle chili powder so I used a smidge of that for part of the chili powder. It is a great base salad recipe to work your own little personality into!

Pan-Seared Chicken Breasts with Shallots
This recipe has become a regular favorite for my family. I originally chose it because I happened to have some dried shallots in my cabinet and I thought I could substitute them. They worked great. Just a couple of teaspoons, and they are all chopped and ready. Such an easy recipe and it wins praise every time! This would be a great company dish, the taste is very gourmet!

Italian Butter
I wanted an easy appetizer to bring to christmas eve with the family. And the budget is low. Our local grocery makes a very good baguette that you finish baking yourself, so I bought a couple of those and brought this mix and some olive oil. I tore the bread in chunks on a large platter surrounding a small plate of the oil dip .It was gone in no time!
