Easy Pumpkin Muffins

i lack confidence when i cook and love this site because of everyones advise and opinions. my father-in-law is a retired baker and is very critical, but honest. he is 88 years old and needed something to welcome home neighbors thanksgiving day. i made this recipe and read reviews and added 1/3 cup of unsweetened apple sauce and topped it with another suggestion of brown sugar, flour and butter. he can't stop talking about it! i made 2 breads from the recipe - one for him and one for the neighbors. walking out the door today he said "you can make me one of those breads any time." now i have to make one for myself to try!!!!!! and to boot.....it's weight watcher friendly. this recipe was discussed at last weeks meeting. can't wait to make it again and thank you for all the reviews, giving me the confidence to bake for mr. critical!

Mushroom Chicken Piccata

just made this for me & the hubby for dinner. we both loved it. i liked other suggestions about making the same amount of sauce, even though i cut down the recipe. wasn't prepared with all the ingredients so i tried a couple of things. didn't have white wine, so i used more chicken broth. also didn't have a lemon & substituted dijon mustard. thank you for sharing your recipe. i get easily intimidated in the kitchen and this recipe is certainly a keeper! thanks again.

yummy! thank you for sharing. i read a lot of the reviews and because i'm trying to follow a points diet, i omitted the oil completely and used splenda in place of white sugar - and used less splenda. i used less splenda after reading other reviews. so good, i'm making it again today.

Pineapple Grilled Pork Chops

just made this for dinner and hubby & i both thought the chops were very moist and tender. didn't change the recipe at all. i will be making this again & again! marinated the chops for about 5 hours. thanks for sharing. finely chopped onions & carrots and added those to rice pilaf and served with the chops. yum!

To Die For Fettuccine Alfredo

liked this very much and super easy. didn't have fettuccine, so used cheese tortellini and added chicken, sprinkled with mrs. dash that i sauteed in butter and garlic and steamed broccoli. tossed it all together and it was very yummy dish. prepared the alfredo, as one other user commented, using less butter and didn't have heavy cream, so substituted 1/2 & 1/2. it's a keeper. thank you for sharing.

we liked it! there are only 2 of us but as other reviewers commented - i made the sauce for 4, which was perfect. i served this on top of trader joe's lemon pepper pasta and it was delicious. thank you for sharing.

Apple Pie by Grandma Ople

thank you for sharing this recipe. after reading other suggestions, i did add cinnamon, nutmeg & vanilla. i also used 2 T flour plus 1 T cornstarch. i over thought things and was very confused about when i should add the leftover syrup. after cooking for 5 minutes, i pulled it from the oven and glazed the top with the remaining syrup. perfect pie. i can't thank you enough for sharing your memories and grandma ople's recipe.

Spinach Cheese Appetizers

i have been making this recipe for years and it is always a hit. i only use 1/4 cup of melted butter and now as others have suggested, try using parchment paper to cut down on the fat. i shred two 10oz cracker barrel extra sharp cheese and add 1/2 cup of finely chopped onions and around the holidays i sometimes add finely chopped red pepper for holiday color. during summer months i have substituted the spinach for well drained grated zucchini. enjoy!

Unbelievable Chicken

i am trying to follow the hcg diet. having to avoid sugar, i omitted the brown sugar and substituted 2 T of stevia, which is allowed. olive oil is also a no no, so i omitted that too. after searching "ingredients" this recipe popped up, using the cider vinegar and lemon - 2 very important ingredients on the hcg diet. i cut the breasts into kabobs, marinated for only and hour (it took so long to find a recipe) and grilled them and they turned out great. i'm sure brown sugar would have been much better, but it worked fine, minus the calories. i can't wait to make it again. thanks for sharing.

Red Wine Braised Short Ribs with Smashed Fall Vegetables

i tweaked this recipe with another recipe that i found. instead of preparing the fall veggies later, i brown the meat & remove. then saute the chopped red onions 1st, then add 2 cups 1/2" chop carrots & 2 cups 1/2" chop parsnips & saute for 5 minutes, then i add the chopped garlic - saute another minute and add 1 bottle of red wine & 1 can beef broth. i also cooked it for 2 1/2 hours in a 325 oven - perfect. i take the ribs out, strain the veggies, refrigerate the stock - skim all the fat - thicken with a bit of butter & flour and pour over the ribs. reheat a bit & serve with smashed potatoes. yum yum.

Stuffed Tomato Basil Chicken

we loved it. this morning i decided to roast tomatoes in the oven, that had been tossed with basil, s&p & garlic & a little sugar. it was a good way to warm up the house on a cold day and use blah tomatoes! i didn't know what to use them with and found this recipe. after reading reviews, i thought i would try my tomatoes in this recipe. i marinated the chicken in the juice left over from my tomatoes. i stuffed the chicken with the roasted tomatoes and grated parmesan cheese and a couple of fresh basil leaves. i topped them with a bit of panko crumbs and baked for the suggested 15 minutes at 500 degrees and they were perfect. thank you for all the suggestions. i counted it as 7 points towards my diet and can't wait to make this recipe again.

Linguine Pasta with Shrimp and Tomatoes

Made this tonight and followed the recipe. Didn't have cajun seasoning on hand, so substituted zesty montreal seasoning and added a little cumin. Added the cream, parmesan cheese and fresh basil, as the author suggested and it was fabulous. I cut the recipe from 6 to 3, although only 2 were eating and next time, I will make more sauce.

Baked Teriyaki Chicken

I double the recipe as reviewers recommended because i was cooking 10 skinless chicken thighs. rather than use soy sauce, i used brag's amino and used about 3/4 cup. wow was this salty. it smelled wonderful while baking. 1/2 way through and basting, i tasted the sauce and decided to add a little (1/8 cup) of orange juice....thinking that this would bring down the saltiness. overall, good recipe, but too salty for me.

Bow Ties with Sausage, Tomatoes and Cream

read many reviews looking for something to do with fresh tomatoes from my garden. decided to use fresh instead of canned tomatoes, like someone else suggested. had no sausage, so substituted hamburg and can't wait to use sausage the next time. learned that 28oz of canned tomatoes is equivalent to almost 2cups fresh. trying to abide by a ww diet - i substituted fat free 1/2 & 1/2. i found the recipe very similar to martha stewarts "bibba's meat sauce" recipe minus the calories and very delicious. both my husband and i enjoyed the recipe (despite my substitutions) immensely. thank you.

this was ok. i even made my own chicken stock and my finished product, looked nothing like this picture. i agree with another reviewer, and only cooked for 10 minutes - that was plenty. if i make this again, i will slice the onions even thinner and saute them longer than 1 minute before adding the stock.

Lobster Bisque II

i agree with others - very bland. even my husband thought it tasted like warm flour. i added more sherry, some white wine, old bay seasoning and a dash or two of worcestershire sauce to give it some taste and probably put in 2 cups of cooked lobster. after letting it simmer for almost an hour, we had more taste. i love my lobster. ended up with a good bisque, but wanted a fabulous bisque.
