Butter Sauce

This sauce was restaurant quality! I kept the ratios as written, but cut the recipe in 1/4 and it made plenty of sauce for the two of us. Incredibly easy to make, with terrific flavor. I used 1/4 c butter, 1/4 c chicken broth, tbls lemon juice, tbls white wine, and a clove of minced garlic. No salt or pepper needed for us. Served over pan seared tilapia and pollock with brown rice for a side. I would serve this to guests I wanted to impress!

Banana-Chip Oat Muffins

One of my favorite muffin recipes! These always come out great as written, but I usually make a few changes. Oil instead of applesauce as I rarely have that on hand; cinnamon for more flavor; dark chocolate bar chopped instead of semisweet; old fashioned oats instead of quick-cooking; and added coconut, flax meal or oat bran. Sometimes I sprinkle the tops w/ cinnamon brown sugar for added greatness. If you use extra ripe bananas and dark chocolate, the flavors work really well together.

Easy Banana Bread

The best recipe yet and I've tried many. This always turns out perfectly. I make it with 3/4 c white sugar & 3/4 c brown sugar, 1/2 c oil and 1/2 c shortening. Next time I'm going to try it with 1/2 c oil and 1/2 c applesauce. I also dust the top with flaxseed for a nice touch. This is good cold, warm with butter, or cold w/ chocolate frosting!
