Antipasto Platter

I brought this to a party, and not one bit was left. Everyone wanted to know who made the anitpasto! One word-to-the-wise: it's very expensive--I think it cost me about $60-70 for all the ingredients. And you'd better get a patient deli-person to wait on you!

Chicken and Biscuit Casserole

This is a staple wintertime recipe. Also, hate to say it, but I've made it both with chicken broth and then with 4 bouillon cubes + 4 cups water. Now I like to go "fresh" when I can, but it was much blander with the chick. broth. Tastes considerably better with the bouillon cubes; either way, it's an excellent recipe, and nice to see a casserole without a can of soup in it, and also with so many fresh veggies.

Sloppy Joes II

I give these the highest rating because it tasted great, it was easy to make, and it consists of everything you'd have on hand. Sloppy Joes shouldn't be a gourmet affair, it should be a quick-to-make weeknight meal that tastes good. These are the only ones I will be making from now on.

Burger or Hot Dog Buns

Excellent for chili dogs. I used a rolling pin to make the rectangles for the hot dog buns--it took a little time, but definitely worth it. Can't wait to try the hamburger buns, and it'll be much quicker.

Cowboy Mashed Potatoes

These were good, and I didn't even have carrots or jalapeno on hand. I dashed in some cayenne as I was mashing. I also used regular baking potatoes--now I'm no potato connoiseur(sp?), but they weren't very creamy, so I added more butter and some milk. Are the recommended potatoes creamier? I've never really compared them side-by-side.

Creamy Rice Pudding

Wonderful recipe. My 3-year-old just loves it, and it turned out nice and creamy. I was skeptical, as I've always made rice pudding by cooking the rice in the milk, but it came out great-tasting, and the big bonus is that it's a great use for leftover rice! And it doesn't make too much. One warning--3/4 cup uncooked rice yields more than 1-1/2 cups cooked. I used only 1-1/2 cups cooked, and think that any more would've taken away the creaminess.
