Miso and Soy Chilean Sea Bass

One word for this recipe.....YUMMYLICIOUS!!! At least that should be a word. Make sure to marinate the fish for at least 4 hours, use a hot pan (med to medium high heat) with just a touch of olive oil, and cook one side for two minutes to get a nice crust, and then turn over and cook for another five minutes covered. Comes out moist and delicous!

Best Big, Fat, Chewy Chocolate Chip Cookie

I absolutely love these cookies just as they are; however, if your family is like mine and they like chocolate chip oatmeal cookies then adjust the recipe as follows: 1 1/2 cups flour, 1 cup oatmeal. I also added 1 cup of chocolate chips and 1 cup of butterscotch chips. I used a mini scooper (just slightly bigger than a melon ball) and used two scoops per cookie..just plunked first scoop down and added the second scoop right on top pushing it down just a little. Cooks 8 cookies per 11 x 13 inch pan so use two cookie sheets per rack. Trust me, they don't flatten out as much because of the oatmeal and I cook them anywhere between 17 - 19 minutes. Enjoy!!!

Garlic Prime Rib

I prepared the roast by adding rosemary to the recipe and then rubbing the marinade all over the meat, wrapped it in plastic wrap, and let it sit overnight in the refrigerator. The next day I took it out of the frig and let it sit on the counter for about 30 - 40 minutes prior to cooking it in our rottiserrie grill until the temperature hit 140 degrees. It was incredible!!! Great recipe.

Caramels I

I've made this recipes soooo many times now it's hard to count and everyone loves them!!! Instead of a 9 x 13 inch pan, I use an 11 x 13 cookie sheet and the size is perfect (plus you get a lot more)!!! A couple of things - I cook mine to 238 degrees and I make sure that I line my pan with foil first before pouring the caramel into the pan. Easy to remove and easy cleanup! Great recipe!!!!!

Boudreaux's Zydeco Stomp Gumbo

My family loved it! However, I did make the following modifications: Used 2 large cans of chicken broth (49oz), 2 cups shredded chicken breasts (boiled then sauteed with olive oil and sausage), and 1/4 cup of Worsteshire sauce. The sauce turned out perfect...not too thick or too thin) and it tasted great! Thank you for this recipe. It is definitely a keeper!

Broccoli Cheese Soup

My kids loved this soup; however, I changed it just a little. I added 1 cup of milk and 1 cup of cream, used 1/2 Velveeta and 1/2 real cheddar cheese, and topped with shredded colby jack when served in a bowl. Absolutely delicious!
