Famous Butter Chicken

Reviewed: Jan. 28, 2011
Great base recipe!! The few changes i made were to dredge the chicken breasts in flour seasoned with ground mustard, paprika, onion powder, garlic powder and chipotle spice. Then I dipped them in an eggwash with about 1 tsp honey, 1 tbsp of sriracha sauce, garlic powder, onion powder and a little lemon zest. I then breaded the chicken with crushed ritz crackers seasoned with chipotle spice, ground mustard, onion powder and garlic powder. I placed the breasts in a baking dish and placed a little bit of butter around them with some minced garlic, and a larger pat of butter on each breast with the juice from a jar of minced garlic on top of the butter (in case you couldn't tell, i love garlic). I cooked the breasts @ 350 for 15 minutes, flipped them over and baked for another 10 minutes....came out FANTASTIC!! served with chipotle mac and cheese from this site

Apple Pumpkin Pie

Reviewed: Nov. 3, 2010
This recipe was originally given to me by a co-worker, however, I didn't follow it exactly. Instead of using canned apple pie filling, I made my own. I also omitted the corn syrup and instead used a couple of teaspoons of the liquid from the apple pie filling that I made...I served is at room temp with some whipped cream....it was phenomenal!

Smoky Mountain Chipotle Chicken

Reviewed: Sep. 28, 2010
FANTASTIC...the BBQ sauce alone was incredible...however, i did change up the recipe a bit. I pretty much followed the recipe for the sauce exactly (i don't measure when i cook and i tweaked the recipe to my personal liking) but instead of grilling the chicken, i cubed it up, seasoned it with grill seasoning and then threw it in the crockpot with about 1/2 the sauce. I let that cook on high for about 2 hrs and then low for 2 more. I then removed all the chicken chunks from the crockpot and shredded it in a bowl with 2 forks, put in on a bun, topped it with some more of the BBQ sauce, placed a slice of smoked gouda and a slice of provolone, but it under the broiler for 2 minutes to melt the cheese, topped it with chopped red onions and then the top bun....best sandwich i've had in a longggggg time!! =)

Cucumber Punch

Reviewed: Jun. 3, 2010
This punch was fantastic!! It's so refreshing and easy to make....the only thing I changed was that I added some vodka to make it an "adult" punch....I served the drink in a chilled martini glass with a cucumber slice on the glass as a garnish...I used unflavored vodka, but I know that Smirnoff makes a white grape flavored vodka so next time I would like to try that...all in all it was a huge hit!
