Korean BBQ Beef (Pul-Kogi)

I followed the recipe only changing the rice wine to rice vinegar due to not having any. I made a double batch to freeze ahead.When I pulled 1 out I let it marinate a day in a half. It was so good my picky eater took the rest to school for lunch without a crumb to spare. This dish is sweet and spicy. Just right. Not hot, but very flavorful.

Crunchy Chicken Casserole

This was very tasty. The only complaint was my one son who doesnt like celery but got past the looking at it and said he liked it. I only did a few things different. I cooked the onions , celery, and garlic with the chicken. Boiled the rice which I wound up with around 4 cups. I used all of it in the casserole. Due to others remarks about the mayo I decided to only use less than 1/2 cup. I used everything else in the recipe and it was delicous. Oh , I didn't have corn flakes so I subd with dried bread crumbs and sprinkled w/almonds and a dash of butter on top. yummy!

Apple and Onion Dressing

A+ my whole family loved this and I plan on making it everytime. My son who is a picky picky picky eater who wont even try anything that touches not only tried it , he ate the whole thing before he ate anything else. I had to do a double take.WOW!

Cazuela de Vaca (Beef and Pumpkin Stew)

This was a huge hit for our thanksgiving lunch for 4 people.I cooked it all in a crock pot over night except I didn't add the pumpkin. Then the next morning I cut the top off a pumpkin and saved the top for later. Meanwhile I had some other pumpkin chunks I added to the stew and let it simmer for another 2 hrs. I transported part of the stew into the pumpkin and baked it with a foil on top. I baked it for another hr but I think that was too long. The bottom started to leek. I would say maybe 20 minuted would have enough time for the pumpkin to bake. The top was too big for it to fit in the oven on the pumpkin, so I cooked it for about 30 minutes so it would have an even color. This was an excellent recipe my whole family loved but the only problem I saw was cooking the pumpkin too long. Other than that A+

Whipped Potatoes

I changed the recipe using instant potatoes to save time. When finished, it was too soft and wasn't as rich as I hoped. To use instant potatoes I would use milk, and no water and increase sour cream. I imagine the original recipe would have wonderful

Apple Crisp with Cranberry Sauce

This was yummy. A little sweet for the topping but still perfect for that sweet tooth. The blend of the cranberries with the apples is deliciously sweet and tart, topping off with whipped cream. I liked this cold as well as warm. When it is cold it is firm and has a good flavor.This is yummy.
