Chocolate Cheesecake II

SO delicious. I've made a few different cheesecakes in the past but never a chocolate one. Our daughter requested that for her 7th birthday and I found this recipe. The reviews convinced me it would be delicious. The only changes I made were to use chocolate graham crackers instead of cookies in the crust and then I skipped the chocolate ganache. The reviews made it clear that it would not be needed. This was a huge hit and the crumb especially was a nice surprise. Often cheesecake crusts taste almost burnt but this had a very sweet and soft texture to it. I would recommend this to anyone.

Overnight Blueberry French Toast

I wanted to be sure this would be delicious for my husband's birthday breakfast so I read many of the reviews. I used 10 eggs and 1.5 packages of cream cheese and I also chose to use a long French baguette, cut into 1" pieces (smaller actually). I wanted to avoid what some reviewers said was a strange reaction to the cream cheese chunks. So I tried to make the "chunks" very small and spread them around on all the pieces of bread by hand (icky!). I also didn't make the syrup and we just used maple syrup. The end result? Everything "worked" but it didn't have much of a taste, which was disappointing. It also was quite "eggy" and could have used 1-2 less eggs (8 total). I don't know what else would improve it - perhaps sprinkling some sugar on the whole thing to add more taste. Perhaps simply the blueberry syrup would have been better. Either way, I don't know if this is the best thing to make for a special occasion (at least test it out another day first).

Tropical Salad with Pineapple Vinaigrette

Really unique and relatively easy recipe HOWEVER I agree fully with all the reviewers that the dressing is "too much" to put on the salad - way too runny and I wish I'd known this before as it sort of ruined the overall appeal of the salad as people served it and saw how much dressing was left on the bottom. So I'd recommend either making half as much dressing or serving it on the side. Otherwise, wonderful and goes with so many different cuisines.

Veggie Vegetarian Chili

This was truly excellent chili. I didn't have carrots or mushrooms or kidney beans, and the tomatoes I used were a 15oz can of diced tomatoes but the taste was very good and seemed extra creamy for some reason (could be the bean liquid instead of water?). I did notice that there was a lot of extra liquid to burn off. I might next time use one less can of bean liquid. I would recommend this for someone looking for a tasty healthy chili with ingredients on hand.

Glazed Lemon Muffins

I love lemon and was needing a recipe for a potluck. Firstly, I halved the recipe with no problems but the crumb topping, even halved, was WAY too much. However, I think I also put on too little because when baked it got a little crunchy which was very yummy, but it could/should have been crunchier so I should have been much more generous with the topping. I would also stress that the real lemon flavor is in the glaze so I glazed more than once. The glaze itself I made thicker and whiter with more confectioners sugar and then added more lemon juice accordingly. All in all, sweet and lemony and pretty good!

Award Winning Peaches and Cream Pie

I think the first thing I'd say about this is that it shouldn't have "pie" in the title - that made my family (and me) expect a pie-like crust. The crust reminded me of a custard-y or bread pudding texture and by itself, it simply wasn't very tasty. I also noticed that some pieces had thicker sections of crust vs. filling and that also wasn't tasty. I would say that the cream cheese inside part was pretty good. So all this said, don't expect this to be like a pie but rather a custardy bread pudding. If I make this again, I will halve the crust and double the filling part and call it a cheesecake-like dessert thingy :)

Cinnamon Sugar Butter Cookies II

I feel compelled to review this because it represents the beauty of allrecipes! I needed a cinnamon cookie recipe, found this one, read the rave reviews and gave it a shot. This is a very delicious cookie. I followed the instructions exactly (and I did also chill the dough as others did for at least 30 minutes) and they turned out perfectly. I used a tablespoon to measure out each cookie and the recipe made exactly one less of 4 dozen cookies! The cinnamon/sugar mixture was just right - not too cinnamon-y and enough to cover all the cookies. I see some have experienced dough too difficult to form into cookies - the key is to not have the butter TOO soft when mixing and definitely chilling before forming. The idea others have had to cut the cinnamon and instead add M&Ms is interesting. The difference is this butter cookie recipe has more brown sugar than white sugar which results in a more molasses-tasting cookie and I think chewier too, just FYI. Overall, I would highly recommend this! I'm not a huge fan of cinnamon and I love it.

I know some have issue with the recipe but I have found it to be very delicious as long as you are careful about a few things. Firstly I agree with adding 2 teaspoons to the crust. I also zap the chocolate/peanut butter in the microwave for easier melting. I would disagree with using a 10x15 crust - I've found the crust is too thick to get that crunchy caramelized flavor except on the edges where for some reason the crust is always thinner. So go with a bigger rimmed pan. I also disagree with cutting right away - the knife gets so sticky with chocolate! Let it cool down then stick in the fridge to harden the top, take out and let it soften a little and then cut. Much easier. I've had many people say how tasty this is!

Strawberry Cheese Pie

This is such an excellent recipe! I varied it by using the Cream Cheese Tart Shells recipe from this site and made mini tart shells in a 12-cup muffin pan, baked them, then filled with this mixture and added berries sweetened with sugar on top. They were a HUGE hit and very easy to put together and a great summer dessert!

Cream Cheese Tart Shells

Oh my these were unbelievable. I needed to make mini quiches and I didn't want to risk using my own regular quiche crust recipe and have it not work out in the mini form so I found this - it worked out really well and was much more delicious. It tastes how I would imagine catered mini quiche crusts would taste. I used a regular muffin tin and it made a dozen for me. Sure it isn't very healthy but hey if you don't eat all of them then you're good to go!

Lemon Square Bars

I followed this recipe exactly after reading that some of the suggested changes bring unexpected results. I would however say it is VERY lemony and perhaps cutting down on the lemon juice and sugar in the filling might help. Otherwise it is VERY VERY good and definitely satisfied my lemon craving. It is much better after being chilled in the fridge for a few hours or overnight, which makes it the perfect "make ahead" type of dessert for a get-together. I did find that the baking time caused the top to brown quite a bit, but a dusting of powdered sugar took care of that and covered it. The crust is very delicious and would be perfect for other desserts where the crust needs to be sweet. I would recommend this!!

To Die For Blueberry Muffins

I had high hopes for this recipe considering it's the most-rated highest rated blueberry muffin recipe on here! I made some of the changes suggested such as applesauce instead of oil, lowered the temp to 375, doubled it to get 16 big muffins, added more blueberries, etc. I thought these would be knockouts but instead they were just "good." Nothing special but also not a disaster, which is good. And that's why it's 3 stars.

Chocolate Bar Pie I

This wasn't too time-consuming to make, considering it is a pie after all, but the results are very yummy. I didn't feel it had that "wow" factor, though. Perhaps some topping like others have suggested, but I almost think this is on the verge of being too rich and would be afraid to add anything else to it. Overall, this is tasty and not too expensive. I will probably make it again but not when I'm aiming to impress.

Thai Coconut Chicken

I was somewhat disappointed with this recipe. I was hoping that the ease of it would mean it's our new "Thai recipe" that I've been looking for. But there simply was not a lot of flavor. I also used only a 1/2 tsp of curry paste instead of 1 tblspn of curry powder, since that would be way too spicy for me. I don't know what you could do to flavor this up, but I would just recommend another recipe.

Unbelievable Rolls

I have tried hard to find a good roll recipe, because we like to try to be healthy and rolls typically have a lot of butter to make them flaky. This one my husband (whose mother makes good rolls) approves of very highly. It is sweet probably due to the milk and easy to shape. I love the lack of much cleaning up to do afterwards. The only thing I had to change was putting it in a warmed oven to let them rise. Otherwise they don't rise and are too dense. But with that change, they come out perfectly.

Broccoli, Pepperoni and Three Cheese Calzones

This is a great recipe. While it may not be the easiest or fastest, it is worth the effort. I made a different filling for it, however, and I think you should feel free to make whatever filling you'd like. Because my filling was only enough for 4, I used the dough to make 4 calzones even though the recipe makes enough dough for 6 calzones. That was a mistake on my part, because it made the calzones too doughy. But my husband was raving about it; between each bite he said "This is delicious," "This is soooo good!" That's worth any amount of effort! :)
