About this Cook
My cooking interests changed to mostly Italian and Mexican dishes. Grilling and slow-cooking are fun ways to enjoy the flavors I dish up for my kids. When I am not around a heat source cooking up something tastie, I hope I'm on the golf course.

I love cooking anything I can add cumin,avacado, and/or cheese.

Pizzas after midnight from scratch with my brother, or Saturday pasta making day with the family.
My cooking triumphs
Way back in the day (circa 1987), I cooked a four-course dinner for my husband, using a broken oven/stove and my microwave; in our kitchen that was smaller than most "1/4 baths" in peoples homes.
My cooking tragedies
I cannot cook rice to save my soul. Not in a pot, not in a pan, not in a steamer, not anyway. Thank you Uncle Ben's 90 second microwave rice! Without you, my dishes would be incomplete.

Chef John's Perfect Prime Rib
Disable your smoke detectors if you prepare your roast this way! My oven cooled down much faster than two hours I feel because we had to open the windows. So, my roast was rare. I should have stuck to my instincts in preparing this cut of beef, but thought I'd give the method a try. I also did not use butter as the cut is fatty enough, nor the seasoning suggested. I rubbed crushed garlic, kosher salt, and peppercorns over the top & sides and made the 'Chef John' AuJus which worked very well and even left a great flavor on the palete of my fastidious 7yr old Asperger son - AFTER I finished cooking the meat, of course!

Mall Pretzels
Each time a make this recipe, the kids want me to make 'another batch' right away. I do use regular flour, although I plan to make them 'healthier' next time. I do 'dip n blot' then add course salt, as many others have. Normally, we top with cinnamon or garlic-butter, but today ~ it's home-made caramel from Chef John on Allrecipes. Why the 4 out of 5 - well, it takes quite a bit of work to do these, when most don't have the time that I do.

Salted Caramel Sauce
The flavor is so amazing (WATCH the video) for the ease in creating this sauce. It is exactly what I've been thinking of since Junior High Foods Class when we learned about the chemical changes taking place in cooking methods of certain foods. While my sons were board with my 'back in day' story, they were thrilled to enjoy this caramel sauce over sliced apples after school the other day. This sauce is so versatile! I froze some to make the kids Slo-Pokes for when they got home from school yesterday. Today, I am making some pretzels so that they can enjoy the caramel that way, as well. Oh, and with my 1/2cup of Birthday Bash ice cream last night, the caramel was the BEST part of the Bash. Yes, it is very tasty on apples, but I'm not one for limits in the kitchen.
