Double Tomato Bruschetta

I had this saved in my recipe box for a long time and finally had the opportunity to make it. It is INCREDIBLE. I received rave reviews for all our guests and many of them left with recipe in hand. I love those moments! I used other reviewers suggestions and served this in a bowl with crisp bread (w/ the melted cheese) around the outside . That was simply a little more practical for me. So easy, so delicious!

Chicken Cordon Bleu II

Not that this recipe needs any more five star reviews however I simply had to give my two sense. It's delicious!!! My family was expecting my Yummy Yummy meatloaf so when they walked in the door I received a few 'sighs' when thy saw me cooking cordon blue. Then they started questioning why it was not being baked. I thought about throwing it in the oven as other reciewers suggested however I like to follow the exact recipe the first time around. Needless to say no questions were asked when my family took their first bite! Def a big hit and will certainly be made (exactly the same) again!!!

Broccoli Cheese Bites

I would like to customize this recipe but am unable to because I'm not a member. I thought I'd add some suggestions as it seems some tips/alterations would make this recipe a success. If keeping the ingredients the same it is very important you let the broccoli/cheese mixture 'set' for atleast 15 minutes. I do not however suggest using breadcrumbs as I think a wet batter or wonton wrapper would work MUCH better. You will find it will no longer fall apart when frying them. I hope everyone reads this review before attempting it as is and being very disappointed!

Peanut Butter Popcorn

Awesome recipe! We were having a graduation party and came up short on desserts (aside from the sheet cake) I wanted to put out something sweet but something different than the cookies/cupcakes. This would have done the trick if it made it to the party! I made this only a few hours before everyone started to arrive and it was gone before our first guest came. While I followed the recipe I kind of played a guessing game on measurements and it still turned out great. I personally recommend crisping it in the oven while my family enjoyed it either way. Hands down yummy. Thank you for a such an easy addition to my recipe box!

Poppy Seed Dressing I

This is the panera bread fat free/sugar free salad dressing i've been searching for. They stopped selling it two years ago and only offer the salad seasonally. I go through withdrawl over the winter...but not anymore. I use splenda instead of white sugar. Thank you thank you thank you!!

Dad's Asian Slaw

Delicious and soooo easy! I've never been a fan of creamy coleslaw and I was responsible for bringing some to a tailgating event this past weekend. This was incredible. Not only did it suit my needs the crowd couldn't get enough of it. We had a ton of food and my dish was the only thing that did not need to be wrapped up and taken home...it was gone!! Thanks for such an easy and delicious recipe!

Leftover Casserole

Super easy and equally delicious. I modified spices to my families taste. I added some tabasco sauce as we enjoy a little kick to every meal and topped it with Italian bread crumbs during the last five minutes of cooking! I used left over pork instead of ham. Makes me happy the extra meat went to another meal! Will definitely use the recipe with other meat in the future!

Apple Mashed Potatoes

I decided at the last minute I'd like to put a little spin on our typically mashed potatoes. I had pork in the crock pot for most of the day and was thinking about making twice baked potatoes to complement the meal. I wanted to spend more time with the family rather than in the kitchen so I quickly tried to find something different. This was perfect! Apples and pork complement each other very well!! I got a few funny comments from the family when they saw me putting it together however no complaints when it hit their mouths. I subbed apple sauce for the apples as I didn't have any on hand and added a little extra sugar to make them a little more sweet. Will now make these taters with pork every time!!

Bacon-Wrapped Scallops

I tried!! My family does not share my passion for seafood so I thought the best way to get them started would be to use a non "fishy" type of seafood and wrap it in bacon. Can't go wrong huh? The bacon was cooked nice and crisp however the scallop itself was very bland and in my opinion undercooked? It was not a big hit tonight which was very disappointing on my end. Did I do something wrong with simply just broiling the scallops wrapped in bacon? Ohhh I also put some brown sugar/buttery spread on before cooking...still nothing special!!

Buffalo Chicken Wontons

These were a hit! I did not have a deep fryer so I just fried them in oil on the stove top. For a healthy version I used Pam instead of oil.
