Chicken Cordon Bleu II

Phenomenal. One of the few recipes where I don't change a thing. Kids and hubby adore this recipe and ask for it all the time. One of our favorites for sure!

Easy Pumpkin Muffins

Love this recipe! I've made it probably 4or 5 times now using various suggestions by other reviewers. The best version I made is to use the suggestion of one reviewer to use spice cake mix, rather than yellow cake mix and add in the spices yourself. It was delicious! I also always add chocolate chips because my kids wouldn't eat it otherwise. I am also able to "hide" some wheat germ and flax seed and the kids have no idea. Making this with a chocolate cake mix is also wonderful but I think the spice cake mix is the best! So easy and semi nutritious with the fiber from the pumpkin. My kids take this as a snack to school all of the time. Freezes really well too.

Whoopie Pies

These are incredibly good, especially when making a few modifications. Like other reviewers, I added a box of instant chocolate pudding to the mix. True, the "dough" is very runny but trust me, it works. Parchment paper will be your friend. I put two cookie sheets in one oven for 11 minutes, rotating the sheets from top to bottom halfway through cooking. As for the filling, I used a recipe I found on another site for a more "authentic" whoopie pie. Their cake was way more complicated than this one but the frosting was easy enough and was as delicious as other reviewers (on that site) said it was. Here's what you do: In a saucepan, on medium-low heat, stir 1 cup whole milk with 5 tablespoons sifted flour. Stir constantly until thickened (not too thick). Let cool. In a large bowl, cream 1 stick softened butter and 1/2 cup shortening. Add 1 cup sifted confectioner's sugar, 1/4 tsp salt and 2 tsp vanilla. Mix with blender on Medium until well blended. Add cooled flour mixture 1 tablespoon at a time and blend with blender on high until light and flufffy. This filling is wonderful and goes perfectly with the whoopie pies. Got lots of requests for this recipe when I made this for a party! As other reviewers stated, this is best made the day before. It's also yummy if you microwave it for a few seconds before eating!

Orange Cream Milk Punch

This is a wonderful punch! We used this as our "witches brew" for our kids' Halloween party. We made it in a plastic cauldron. I added 3 cans of Fresca and pretty much just threw in the other ingredients without paying attention to measurements. I also put in plastic eyeballs and fingers. People loved it and thought it tasted just like an Orange Julius or Orange Creamsicle. Will definitely make again.

Spinach and Strawberry Salad

Just made this salad for a dinner party and it was a huge hit! I will make this salad all the time now. I also halved the sugar like others recommended and substituted Raspberry Balsamic Vinegar for White Vinegar. Also, left out the seeds(I couldn't find them in the store) and used sliced almonds. Delicious.

BLT Salad

My husband and I loved this salad! For a little more flavor, I added 1 tablespoon of the powdered ranch dressing to the mayo and milk mixture. It was delicious! I also substituted bacon for Turkey Bacon. Tasted just like real bacon but a bit less fat!
