Mom's Buttermilk Pancakes

I was very surprised not to see not even 1 little TB of sugar in this recipe. But I went ahead and made it as is. It tastes VERY salty! BUT, once you add syrup or jam they were so delicious! My kids (11 and 6) like to eat them plain and they both commented on the saltiness. When I suggested next time I will add sugar, they both said No. That with the syrup they tasted great and that they would still eat them without. Okay then! We have a new buttermilk pancake recipe.

Eggplant and Tomato Bake

This was delicious. I had to use tomato paste instead of puree (just added water to the thickness of my liking) and used light sour cream instead of the yogurt bc I didn't have any. Fantastic! Tasty & easy. Microwaved the eggplant as suggested. My breadcrumbs didn't get toasty enough but maybe I used too much.

Vegan Chocolate Cake

I am not vegan but have a niece and nephew who are lactose intolerant. These were surprisingly good. Everyone liked them, even my kids who don't have this problem. I didn't change the recipe at all.

Chicken Breasts with Balsamic Vinegar and Garlic

This recipe was very good. I did cut down the balsamic vinegar to 1/8 cup (2T) b/c it was something new to my kids and I didn't want it to overpower them. They loved it. Also, I made it with frozen broccoli florets instead of the mushrooms b/c my husband is allergic. Make sure you add the florets towards the end of cooking or else they'll get mushy. Ask me how I know.

Mrs. Fields Sugar Cookies

I think it just all comes down to personal preference. I don't like sugar cookies and I've never made them before but these were right up my alley. They were easy to make, not overly sweet although I added 1c of sugar instead of 3/4 and I added 1tsp of baking powder. They came out fluffy and I loved the taste. We topped them with chocolate chips after they came out of the oven. Some with sprinkles (they didn't stick) and some with icing. I thought they were great and my 8yo thought they were "pretty good."

Garlic Balsamic Shrimp

This marinade recipe was very nice. The taste was subtle but very pleasing. I marinaded the shrimp for 30 minutes and use pre-minced garlic. It was really delicious. My family really enjoyed this. I made half of my shrimp with this recipe and half with the Mexican Shrimp and Vegetables Kabobs recipe and they liked both.

Mexicana Shrimp and Vegetable Kabobs

This marinade was very good! My husband and daughter loved and I'm trying it on chicken tenders tonight. I used one of those "fake" plastic lemons that has the lemon juice inside and it was still good. I broilled the shrimp for 3 minutes on each side and it was perfect! I also didn't use any veggies on the skewers because the shrimp came pre-skewered.

Zesty Southern Pasta and Bean Salad

Fabulous Chocolate Chip Cookies

Well, I don't know if I did something wrong but these came out like little clumps of dough. Although I enjoyed the taste of the cookies, they didn't spread at all. I only know how to bake by following recipes, but maybe if I add a little more butter next time they will spread better.

Banana Crumb Muffins

The topping is what makes these muffins really good. I thought the muffin itself was just okay, but my husband and daughter LOVED them. I didn't add any white sugar and just 3/4 cup of brown sugar. I just prefer using brown over white sugar. Will definitely be making these again.

Cowboy Cookie Mix in a Jar

I put these into those cellophane Party Loot bags and added a nice ribbon at the top with the instructions. Gave them away as Christmas gifts. I kept one for myself and felt that they needed about 1/4 LESS sugar and less chocolate chips and some water. I added water once I was mixing it cuz I just couldn't get it moist enough. The result however is very good. I think they're a great gift idea, especially for moms with young children. They just pour it out, mix in what's missing ad voila! No mess, no stress!

Six Spice Maple Cornish Hens

THis was the first time I used the broiler and I loved it. However, the maple syrup only stays on the skin and doesn't get absorbed by the meat. Maybe the syrup should stay on for a couple of hours before broiling.

Mocha Coffee

Too chocolatey for me. But otherwise very good. I followed another reviewer's advise and decreased the chocolate to 2 tsp and that makes it better for me. Also, I increased the milk to a total of 1/4 cup and it's almost like Coffee Bean.

Simple Shrimp Pasta Salad

It wasn't as great as I thought it would be. But I used frozen salad shrimp. I thought that maybe if I grill the shrimp next time, it will taste much better.
