I never had an interest in cooking until I found it to be an amusing distraction from school work during college when I was living in my first apartment. Never being one to follow the rules exactly, I love to take others' recipes and alter them. I'm starting to feel more brave about creating my own dishes that I hope to publish online.
My favorite things to cook
I love one-pot dishes that my mom taught me to cook, particularly chili and goulash. I also enjoy experimenting with different stir-fry dishes and am currently perfecting my fish taco recipe. I find it hard to be motivated to both shop and cook, so dishes that are ingredient substitute-friendly are key.
My favorite family cooking traditions
My mom makes the BEST chili ever. I also love her meatloaf.
Probably my favorite cooking memories, though, are my dad's tax-season go-to's (when my mom was working late hours every night): popcorn shrimp night, frozen pizza night, breakfast for dinner night, ramen noodles night, frozen lasagna night. Hey- he can cook the biggest, yummiest pancakes ever.
