Cornish Game Hens with Garlic and Rosemary

Agree with others that this is a delightful, tasty recipe but the game hens I cooked definitely required more time than the recipe specified. I'd say about 20 minutes more. I also doubled the liquid that the recipe called for and threw a quarter cup of flour into it afterward to make a delightful gravy.

Chicken and Red Wine Sauce

I think the commenters are correct in suggesting less brown sugar. I used about 1.5 tablespoons of brown sugar and two tablespoons of black strap molasses, plus a bit more than a cup of red wine. The molasses really added a beautiful color and flavor, plus a nice viscosity. Will definitely make again.

Pot Roast, Vegetables, and Beer

Pretty darned tasty. Differences from recipe as written: I used a 1.5 lb eye of round roast, an Oatmeal Stout, dried thyme, 1/2 Vidalia onion, unpeeled potatoes, and Grey Poupon mustard. I suggest using less thyme. 3 tablespoons was a little overwhelming. And perhaps if you added more flour, you'd have a thicker gravy. This was fairly runny. I found I needed to salt the roast liberally.

Oregano-Lemon Chicken

This was probably the best chicken recipe I've ever tried. I used boneless, skinless thighs, and as advertised, the honey+herbs+lemon juice coated the chicken beautifully. I amended the recipe by using slightly more honey (almost three tablespoons) as well as a fancy rough citrus salt. I set the oven to 400 and was pleased with the crisp glaze the juices formed on the meat. I recommend basting frequently.
