Bruschetta with Roasted Sweet Red Peppers

Quite good! Received many compliments. However, as a matter of preference, I think the roasted red peppers are too sweet. Would suggest increasing the ratio of tomatoes to peppers.

Delicious, but don't throw out the liquid! Add canned crushed tomatoes to the salsa, add chicken bouillon, and you've got machaca! Serve with beans and warm tortillas.

Delicious! My grandmother's recipe was similar: beef only, skip the salsa, use chicken broth, add sliced zucchini and carrots. Serve with salsa valentina and warm tortillas.

Pumpkin Pecan Cheesecake

After a trial run, I made modifications: used a spring-form pan, made our own crust thicker to support the weight of the cake, 1.5x cream cheese, substituted canned pumpkin, made the pecan topping thicker. Most popular item at last year's Thanksgiving dinner!

Peach Upside-Down Cake III

Fresh peaches are key! This was scrumptious. The consistency was more of a bread pudding than a cake. Lovely with a little bit of whipped cream or just a bit of milk.

Easy Chicken Posole

Mexican comfort food! My family's recipe is slightly different: 1) use pork tenderloin, brown it the pot along with garlic and onion. 2) Add chicken broth (reduced to 1 cup) and use 3-4 cups of salsa verde (home-made or Herdez). 3) Skip chili powder and add finely chopped cilantro 4) let simmer for 1-2 hours until meat is tender, then remove from pot and shred with a fork. 5) return the meat to the pot, add hominy. 6) simmer for another 15 minutes at least. Serve with shredded cabbage, lime wedges, and sliced radishes.

Ooey-Gooey Cinnamon Buns

Sinfully good! Made these for my husband and brother-in-law after a long camping trip, and they kept asking for more! I altered the recipe a bit by using golden raisins and sliced almonds in the filling and on top. Will make again for overnight guests!

Agree, that this makes an attractive dessert, but I'm not a custard/pudding fan. The instant vanilla pudding is quite overpowering. Would be much more delicious with just the whipped topping or fresh whipped cream.

Cheesecake Cupcakes

Prepared the cheesecake according to other reviewer's suggestions of 1 egg/1 package cream cheese. Otherwise, would have been too eggy. The cheesecake itself is delicious, but gets completely overpowered by the sour cream topping. Also the topping does not hold up well at room temperature. Would suggest skipping the topping and using fresh fruit or a chocolate drizzle instead. I will not be making these again.

Hawaiian Wedding Cake I

Delicious ingredients, disappointing result. Cake was quite heavy. The recipe as is makes enough for 2 9" round cakes. Tried a butter cream frosting, but agree with others that a cream cheese frosting would probably be better. I think this could be better when prepared as a breakfast loaf - with or without icing.

Overnight Blueberry French Toast

Far too much going on; detracts from the blueberries. Instead of layering the "toast" would suggest whipping up some mascarpone or fresh whipping cream with a touch of sugar to use when serving.

Grandma's Famous Salmon Cakes

Quite disappointed. Hardly any flavor, despite adding some cayenne. Ending up using the patties as fishburgers, but they really needed to be accompanied by tartar sauce. Might taste a lot better if using fresh salmon.
