Chef John's Caramel Chicken

Since I do not know how to edit or delete my previous review so I am writing it again. On the review some had a trouble reducing the sauce so I think I reduced the sauce too much. I was in a haste and did not watch a video. But after watching pics and videos, I noticed that I made mistakes! I would try it again but my kids probably are not thrilled of me attempting this again...

Coffee Jelly

I just made this second time by a request from my husband who buy Japanese coffee jelly from store loved this. I doubled the recipe and used 4 spoonful of instant coffee. I mixed gelatin, sugar and instant coffee all together first, added 4T hot water and mixed for 3-4 minutes then added 4 cups of hot water. Made with Bourbon Whipped cream from this site but my husband prefers to eat with plain sweetened whip cream. It's great for hot summer days! Thanks for the recipe!

Zucchini Miso

zucchini gave bitter taste. I prefer to use Japanese cucumber over raw zucchini. Japanese cucumber is good with miso.

I made this last night to go with Parmesan Crusted Tilapia also from this site. I sauteed onion after egglant, added more garlic, used vine ripe tomatoes, salted both eggplant and zucchini to sweat out some liquid from them before cooking for ~45 minutes wiped dry, sliced everything very thin, baked at 375F (my oven usually take longer than most suggested time on recipes) for 30 minutes and lowered to 360F for last 15minutes (both time uncovered), I probably used less parmesan (around half the amount stated or less). I loved it, my picky husband liked it and had second serving! Not so sure with the kids so I am letting them see the Ratatouille movie again right now. :-)

Cauliflower with Dijon Sauce

I loved microwaving cauliflower but there were too much mayo. 1/4 C would be plenty and half or less dijon. I microwaved mine for 8 1/2 min on high. My kids are picky eater and they always fight over the roasted cauliflower recipe (on this site). They ate little of this one. I will not make this again.

Japanese Style Deep Fried Shrimp

My kids 1, 4 & 5 yr old and even my picky husband loved it and I'm not good at frying! Thank you so much for the recipe! I cut the flour to 1/2 but still a lot left over. I might do 1/3 or so next time. I was generous with garlic powder, used olive oil and made my own crumbs. The size of the egg was not specified and I used 2 large eggs but end up tossing most of it. 1 egg is plenty if it is a large one. Thanks again!

Southwestern Egg Rolls

I made this many times. My very picky family loves it. I double recipe, add one can of black beans, subbed half can of rotel for jalepeno peppers, didn't include any chicken, green onion or spinach (last few times, I was in a haste), sprayed all over with cooking spray and baked at 450F until crisp. But it taste really good, nonetheless! Thanks for the recipe.

Microwave Caramel Popcorn

Thank you this was fast, easy and delicious. My kids loved it. I just microwaved 1/2 cup of popcorn in a brown bag, took unpopped popcorns out. I didn't have corn syrup so I just substitute it with white sugar with dash of water but I got scared of sugar content while making, so I halved the brown sugar and used 2 T of margarine, filled rest of 1/2 C with light vanilla yogurt. It worked for us for now but next time, I might use 3/4 C brown sugar and see how it'll turn out.
