Cantaloupe Berry Smoothie

Very tasty! I only had flavored soy yogurt, used a bit of agave nectar instead of white sugar, added a couple teaspoons of wheat grass powder, and a banana to make it a little thicker. The result - not too runny, not too thick. Perfect breakfast smoothie!

Cream of Asparagus Soup II

I made a vegan version, substituting vegetable broth for the chicken broth and Tofutti Sour Supreme for the half-and-half. The only reason I didn't give it 5 stars was that it was a little bland. I added some chopped onions, garlic powder, and some cayenne pepper as others had suggested. Yummy and SO quick and easy.

Jalapeno Bread I

I've been looking for recipes to use all the jalapeños coming from my garden and this sounded good. The only change I made was the type of cheese. I didn't have Monterey jack on hand, so I used a little cheddar along with some smoked Gouda. My bread machine conked out and the paddle started turning during the baking process, leaving a large cavity inside the bread. Thankfully I was able to salvage quite a bit of the loaf and finish baking it in the oven. Quite tasty! I served it with the Tex Mex Corn Chowder on this site.

Tex-Mex Corn Chowder

This tasted great and was so quick and easy. I only made minor substitutions based on what I had on hand. I didn't have enough corn so I threw in some mixed veggies, needed to use some cream so I used that (6 oz) in combo with a bit of milk, vegetable broth instead of chicken broth, and a little extra cumin and chili powder. Delicious! I served it with "jalapeño bread I" found on this site.

Cilantro-Lime Dressing

I made this dressing following the suggestion of others to decrease the honey slightly and increase the lime juice slightly (basically rswapping the measurements for the two). I also used ground ginger instead of fresh because that's what I had on hand, and culantro instead of cilantro because that's what's growing in my herb garden. I put it on a Mexicali salad sprinkled with crushed blue corn tortilla chips. Delicious! After my husband finished his salad he continued dipping the tortilla chips in the dressing. He wants to use this on Mahi Mahi next. Definitely will keep this recipe in my frequent use pile. Thanks for posting!

Creamy Tomato Bisque

Delicious recipe. Like others I used less salt (only 2tsp). I didn't have anise liqueur, but I did have anise extract so I substituted with 2 tsp of extract. I was concerned the anise and fennel would be overpowering given the strong aroma, but after cooking and letting the favors blend I was pleasantly surprised. We loved it!

Libby's® Pumpkin Roll with Cream Cheese Filling

I've never made any kind of "roll" dessert, but this picture looked so good I decided to try it. It wasn't as hard as I thought it would be. I substituted some of the ingredients to make a vegan version - Tofutti Better than Cream Cheese, Ener-G Egg Replacer - it baked just fine and was delicious!
