Classic Spanish Sangria

I read the reviews and went with the Blackberry Merlot and cut the white sugar in half. I made a triple batch, but only used a fifth of Bacardi white rum. I also soaked the fruit for 2 days, turning it twice a day to make sure it all got nice and soaked. Nectarines, Lemons, Limes, Apples, Oranges, Strawberries were what I used. Next time, much more strawberries and maybe 1 lemon and more oranges. I thougt of using Orange flavored rum and cut out all the white sugar, but thought I should just change one thing at a time. Wonderful, the fruit and drink was gone in no time.

Roasted Carrot Salad

If I could give this 7 stars I would. This is so over the top yummy! Just from reading the recipe I knew it would be good so I made a huge batch for a potluck. It evaporated it was gone so fast. Only thing I did different is since I tripled the recipe, I only doubled the garlic. But still soooooooo yummy. Thank you for sharing.

Dad's Down Home Cornbread and Jalapeno Meatloaf

I made this as part of a comfort food dinner party for friends and it was all gone even though I doubled the recipe. I used half as much jalepeno as called for but used a whole box of Jiffy Cornbread mix instead of cornbread and it was delish! Thank you, I will forever call this one "Dad's Meatloaf" no one has to know it wasn't my dad's!

Sonny's Tater Tot Casserole

I made this for a crowd and made a whole recipe, the general census was it was "good" but a little bland. Not sure if I missed something in the preperation or not. I still liked it alot.

Three Bean and Artichoke Salad

Did not look all that appetizing, I love the dressing but I couldn't fix the presentation. The Butter beans seemed to have made it mushy. would probably try wax beans next time.

Cajun Boiled Peanuts

Since I don't know how boiled peanuts are supposed to taste, I have no idea if I did this wrong, or if I just didn't like them. I added salt like suggested and they cooked for about 10 hours overnight. It wasn't something I would eat a ton of, but I am very glad I tried it. Thanks for the inspiration.

Spinach, Artichoke and Crab Wontons

I really liked these, they come together really fast and had good flavor. My only suggestions are for personal preference: add cayenne for kick. bake the won ton shells longer to make them crispier on the bottom, heat up filling to get it closer to melting so you don't burn won ton edges when doing the second bake.

Argentinean Chimichurri

I didn't have parsley but I did have two bunches of cilantro so I gave it a shot and OMG, the very best sauce on fish, chicken and steak! **UPDATE** I mixed a quarter cup of this in with two cups of alfredo sauce and put it on pasta, very delicious!

Basil Parmesan Spread

Mashed Chipotle Sweet Potatoes

I am not normally a fan of Sweet Potatoes because they are usually made too sweet for me. I made this with canned yams (that I already had on hand), drained well and added no extra sweet anything, and I am now a fan of these for sure. Will have to make them with fresh before I can give 5 stars, but the canned worked nicely.

Cowboy Mexican Dip

I love this one, I added a little salsa because I didn't have enough of the tomato's and green chile's and it was great. Only downside was finding right temperature for the crock pot to keep it from burning to the bottom, but also keep it melted.

Best Zucchini Appetizer

I cut down on the baking mix quantity and shredded the zuccini as reccommended in previous reviews. I will add just a bit more baking mix next time, but probably not the entire amount in the recipe. Every one loved it.

Pasta with Tequila-Tomato-Lime Sauce

I really like this recipe, it's easy and with the exception of the Clam juice, it's all standard pantry items. I will add shrimp next time to make it a more substantial meal, but I am really happy with the outcome. Thanks!

Best Burgers Ever

This is a really good use of ground lamb and spices that you may not eat regularly. I used this meat combination with rice and tomato sauce in a stuffed pepper application and it was delicious, I may play with the cheese choices (I only had swiss, and it wasn't what I was looking for)

Perfect Lobster Bisque

I made this for friends who love Lobster bisque, 20 of them, and it got rave reviews. I used the Shells to flavor the soup and strained it through a sieve, chopped up the tail meat and sauted with butter for a garnish and it was a huge success. Otherwise followed the recipe. good luck
