Mexican Zucchini Casserole

Creamy Chicken and Wild Rice Soup

I also followed other reviews and added veggies - carrots celery & onion. I used slightly less butter ans half cream, half 1% milk b/c that's what I had in the fridge. It was probably the best soup I've ever made. Good thing, because I tripled the recipe and fed 4 families that night with leftovers! Definitely will make again. My kids, 2, 5 & 6 loved it!

Oma's Rhubarb Cake

I started making this and realized I didn't have any sour cream so I used 3/4 cup buttermilk and it was still great! I will make this again using the correct ingredients, but I can imagine it will only taste better. :)

i've tried many, many frosting recipes - i haven't tried another since finding this one. i prefer to use half butter/half shortening, but i've used all shortening and it's great, too!

Award Winning Soft Chocolate Chip Cookies

If you're looking for a great chewy cookie, look no more. I did alter the recipe - I used butterscotch pudding and half butterscotch chips and half white chocolate chips, since that's what I had on hand. I will definitely be trying with vanilla pudding and chocolate! The texture is exactly what I love about chip cookies!!

Mouse's Macaroni and Cheese

I used sharp cheddar, because that's all I had, but I can't see how using a different cheese could make it taste any less yummier than it was! My kids loved it, and so did I!

Strawberry Streusel Muffins

Won't make these again. They look great, but they are not sweet enough (even with the streusel topping). Also were too dry for my liking. I will also note that I did follow the recipe exactly.

Downeast Maine Pumpkin Bread

My husband always says bread is my baking downfall. For whatever reason it NEVER turns out. But, I made this last night & it turned out PERFECT! My 3 kids are gobbling it up for breakfast as I type this. The only thing I didn't follow the recipe on was the loaf pan size.

Pumpkin Whoopie Pies

Made these for our annual Halloween party. Everyone ate more than one and commented on how "awesome" they were. Delicious! However, being the one who made them, they were frustrating in that they stuck to the platter I served them on, we ended up using a small spatula to serve. I wonder if you were to add more flour if they wouldn't stick so much????? Will be making them again and I'm going to try it.....otherwise - addictive to eat! I love the filling - it's what I use on my red velvet cake and is one of my faves!
