Sausage Stuffed Jalapenos

These were great! I did sub colby jack cheese for the parmesan, just for our tastes, so I almost didn't review it. I think it would be good with the parm though. I made the first batch with only that substitution and they were gone so fast I had to make another double batch for our super bowl party last night LOL! The second batch, I added a good shake of Tony Chachere's seasoning and sprinkled bacon bits on top- oh my goodness - they were over the top! Thanks for a great recipe :)

Glazed Ham

I thought this was yummy! I had a 5 pound fully cooked boneless ham. Put it in the crock pot for a couple hours to get some juice from it. Made the glaze, minus the liquid smoke because I didn't have any. I didn't miss it though! Baked it in the oven for about an hour. I think it would have been better had I just skipped the crock pot part, but overall it really was good, and I will use the glaze recipe again :)

Pineapple Angel Food Cake I

Well I think I made the mistake of getting the "two bag" cake mix... mine ended up very flat. But I have to say it tasted good! LOL! I can't wait to try it with the one bag cake mix - I think that will make a world of a difference. My husband enjoyed it - even though it was flat and kinda rubbery. I topped it with sliced sweetened strawberries and whipped cream. Will try again with the other cake mix, and edit my rating then :)

Sexy Shrimp Scampi

Very yummy! We thought it was great :) I followed the recipe, but did add a couple tablespoons of lemon juice. I don't know if that made a difference or not, but my family all enjoyed this dish.

Famous Chicken Adobo

Yum! I originally made this recipe exactly following instructions, using thighs because that's what I had in the fridge. We liked it but found the soy a little overpowering. I altered it to use 1/2 cup soy and 1/2 cup vinegar - and with that small adjustment it is superb. I usually serve it with fried rice and egg rolls. My whole family devours it!

Chocolate Surprise Cupcakes

oh my goodness. These are a little bite of heaven! I followed suggestions to put a little batter in the cupcake liner, then the cream cheese mixture, then top with more batter. I always get more than 24 cupcakes - usually 30 - but maybe my pan is just smaller. I bake them for 20 minutes, and they come out perfectly moist but cooked through. I have found that if I let the cream cheese soften too much, the centers kind of melt into the chocolate part. I remedy that by using the cream cheese straight out of the fridge. Excellent recipe - my sister renamed them "Crack Cupcakes" because she's addicted to them LOL!! Thanks for a great recipe Kellygurll :)

Easy Garlic Broiled Chicken

We thought this was an easy yummy way to prepare chicken thighs. I threw it all together in less than an hour (which is strange for me LOL!) I didn't change anything- used regular soy sauce, and thought it needed a little salt. I put the thighs on a broiling pan - so I had no issues with smoke. Will make again since it's so easy, and I usually have all the ingredients on hand.

Carne en su Jugo (Meat in its Juices)

My family and I loved this recipe... and I am having leftovers for lunch today! I was a little hesitant to try it since no one had rated it but I am so glad I did! Our grocery store did not have serannos, so I used jalapenos, and I cooked the onion with the meat- only because we don't like raw onion. It was really yummy. We had it with a salad with avocado dressing and sliced avocados. I liked it alone, but the rest of the family ate it with corn tortillas. I honestly didn't think combining the beans with the meat mixture would taste so good, but it was. I will make it again for sure! Thanks for the recipe! :)

Poblano Chicken Enchilada Casserole

This was pretty good. I used half the cilantro and the flavor was good... if I had used it all I think it would have been too overpowering. I also added onions to the mix - but onions go into everything I cook. My husband liked it also, so we will probably be making it again. I will probably add some more half and half to the sauce - it was really thick - but still tasted yummy.

Romantic Chicken with Artichokes and Mushrooms

We thought this was very yummy. I did add some onion and garlic but I add those to everything I cook. I served it with angel hair pasta and a salad. I'll probably play with the sauce ingredients the next time I make it - it was very tangy with the artichoke liquid. Maybe add a little cream to it? Nevertheless - this is a great recipe!!

Mini Cheesecakes I

This was by far the easiest cheesecake recipe I've ever made. They tasted yummy too! I did make a couple changes though - I used crushed cinnamon graham crackers instead of vanilla wafers for the regular ones that I made. I also did a couple pans with crushed oreos as a crust with mini M&M's stirred in. The color on the M&M's kinda bled a little, but it made for some "Easter-y" looking little cakes, and they tasted yummy that way too. These are even great without the fruit topping. I will use this recipe again and again. THANKS!!!

Salad de Colores

Oh my. This was a wonderful salad. A very good change from the "same old same old salad". I did not add the pumpkin seeds, but got some sunflower seeds instead. I also added some romaine lettuce and crumbled feta cheese. This is the first time I've ever eaten the balsamic salad dressing, but my hubby and I both went back for seconds! We will have it again (soon!). Thanks for the great recipe!

Enchiladas Suizas

YUM. I used canned green chilies, regular onion, and this was just yummy. I used more cheese though (but that's just because my hubby and I are cheese lovers). I also added one more can of chilies to the sauce, and added a few dashes of red pepper sauce. I didn't put the olives & tomatoes on it either - we just didn't think they would compliment the dish. We will make it again.

VERY VERY yummy! Was finished in no time, and tasted wonderful. BUT - I did use tons more hot sauce. We served it over dirty rice (tony chachere's brand) and garlic bread. great recipe!!

Easy Cheesy Chicken I

Pretty good stuff! The only thing different that I did was to add a 4oz can of chopped green chilies. Very yummy and very easy. I even snacked on it with tortilla chips but served it on rice for the meal. Thanks for the recipe!
