Jamie's Cranberry Spinach Salad

I have made this recipe so many times and it is always a huge hit! I do add 5 or 6 shakes of tobasco and a blop of Worchester sauce to give the dressing a little more zip. I also toast the sesame seeds, poppy seeds and almonds in the oven without the butter and it works just great.

Basic Chicken Salad

I don't always have the lemon juice on hand, so I omit it. I also toast the almonds in the oven for about 15 minutes at 350 which gives them a lot more flavor. We love onions so I also add a small minced onion to the mix. Delish!

Oven Roasted Potatoes

I just made this for company on Saturday and it was a big hit. Used Marjoram, Italian blend, Garlic powder, Red Pepper flakes, salt and dill with olive oil over potatoes and baby carrots. Huge success, absolutely delish. Will definitely make this again.

Coconut Cake I

I made this for a co-worker's birthday today and everyone is raving! Per other reviewer's comments I used only 1 cup of sugar and I used lite Sour Cream and Lite Cool Whip--and no one can tell the difference. Really a treat. Will definitely make this again.

Garlic Croutons

I am updating my review on 02/23/2008. What I have been doing lately is using the Italian Butter recipe on this site when making these croutons and it is delicious. Use 1 T of Italian butter instead of herbs and garlic. Super! I have made these wonderful croutons several times now and they are always delicious! I use about 3/4 parts olive oil and 1/4 part Smart Balance Margarine. I use garlic powder and dried italian herbs---superb!

Egg Salad I

Just made this for a quick lunch and hubby loved it. I added finely diced celery and used low fat mayo--deelish. The dill and paprika did not overpower the egg. Will definitely make this again!

Best Cream Of Broccoli Soup

I have made this multiple times and it's always terrific. USE BUTTER. I keep mine in the freezer and chop/slice off what I need with a good knife. I have used vidahlia, green and regular old onion and combos thereof---it's always yummy! today I thought I'd be smart and add some shredded parmesan romano---nope, does not enhance the flavor and I pulled out the lumps of cheese with my whisk. I also use the immersion blender and leave some good chunkiness as well. I have made a vegetarian version by using veggie broth/stock with excellent results as long as you use that butter. fresh and wonderful.

Mahogany Chicken Wings

Just made these for a New Year's eve gathering and they taste yummy. Next time I will make them with some more rooster sauce (korean chili sauce) for added kick as my hubby loves SPICY!

Butternut Squash Soup II

Just made this on a chilly winter day and it was delicious. I left out the potato since I didn't have any in the house but I added an acorn squash instead. Also spiced things up with about 1 tblsp each of madras curry powder, garam masala and some curry paste. Just mashed this with the potato masher and thickened with a little wondra flour--richly yummy without all that fat.

Cha Cha's White Chicken Chili

This was delicious! I added some jalapeno's from the jar and only 1/2 teaspoon cayenne and it was spiced right for us. Also used a little Wondra flour to thicken it up a bit. Served this with long grain rice and it was perfect. Can't wait to make this again--YUM!

Chicken and Corn Chili

Didn't pull out the slow cooker as I only had some pre-grilled frozen chicken breast slices. I put it all in my large dutch oven and added some fresh yellow, red and poblano peppers. Also added a can of chili ready tomato. Served with Shredded white sharp cheddar and minced vidahlia onion--very good!

Beef Stroganoff III

I just made this for dinner with leftover pork and beef and it was superb. I did dredge the meat in flour and browned then added onion. Used the white wine to loosen everything from the bottom of the pan then followed the rest of the recipe. We loved it and it's so simple!

Chili I

The complexity of flavors with the coffee, beer and cocoa is wonderful and rich. I added some chipotle peppers since I didn't have any fresh hot peppers also only added 1/4 cup brown sugar (per other reviewers comments) and it tastes perfect for us.

Chicken and Stuffing

I have made this many times and we love it. I usually don't add pimentos as I never have them in the house. Also my hubby does not like mushrooms so I omit those but I add extra veggies like carrots or fresh red pepper. I also only use 1/2 to 1/3 of the butter called for for the stuffing and add chicken broth to make 1 cup.

I made this for a party and it is delicious. I did add 1 8 oz bottle of Kraft thousand Island drsg so about doubled that. Serving it with cocktail rye but might pick up some rye triscuits per other reviewer's suggestions.

Crunchy Turkey Salad

Just made this for a quick dinner. I only had braeburn apples so that is what I used. Also used oven toasted almonds instead of walnuts. I only used about 1/2 cup of lite mayo and substituted lime juice for lemon--hubby loved it.

New Red Potato Salad

This is similar to the potato salad Mom used to make with a few tweaks. I left out the eggs and used yellow onion. I also used sea salt and rice wine vinegar which seems milder to me. Husband loved it!
