Linda's Lasagna

Reviewed: May 26, 2007
I, of course, did not follow this recipe 100%. I sauteed onions until browned then added sweet italian turkey sausage and sauteed until all the pink was gone. Then added a spicy italian pre-cooked sausage and a few fresh minced garlic cloves. Let that simmer a bit until all the liquid was simmered out. Added a little stock (I used veggie but I would use whatever is open in the fridge) to get up all the browned pan bits and threw a bag of fresh spinach with slivered carrots on top then covered to steam the spinach--about 5-7 minutes. Cooked over low heat until the moisture was gone--again. I added organic Bertolli "olive oil, basil and garlic" flavored jarred sauce to the mix. Used no cook lasagna noodles and fresh mozzarella--not shredded so I just sliced it. I also did not have an egg so just mixed the ricotta with half asiago and half parmesan. Wonderful!!!

Delicious Ham and Potato Soup

Reviewed: Apr. 15, 2007
I used this recipe as a guideline and it turned out great! I had leftover mashed potatoes to which I had added fresh parsley and green onion for our Easter Dinner. Also had lefover smothered green beans (with bacon and onion) which I threw in the pot. Used half chicken stock and half water. Also used non-fat dry milk since I didn't have any in the house. It turned out yummy and hearty.

Slow Cooker Lancaster County Pork and Sauerkraut

Reviewed: Oct. 28, 2006
I have made this several times now but do a few things differently. I usually brown some chopped proscuitto (or bacon) with onions in a fry pan (really let the onions brown!) and add that to the kraut. Also grate an apple and a potato into the kraut to thicken the kraut juice and temper the sour a bit. Throw it all in the crock pot and serve with mashed potatoes--YUM!

New Red Potato Salad

Reviewed: May 27, 2006
This is similar to the potato salad Mom used to make with a few tweaks. I left out the eggs and used yellow onion. I also used sea salt and rice wine vinegar which seems milder to me. Husband loved it!

Crunchy Turkey Salad

Reviewed: Apr. 20, 2006
Just made this for a quick dinner. I only had braeburn apples so that is what I used. Also used oven toasted almonds instead of walnuts. I only used about 1/2 cup of lite mayo and substituted lime juice for lemon--hubby loved it.

Reuben Dip

Reviewed: Apr. 15, 2006
I made this for a party and it is delicious. I did add 1 8 oz bottle of Kraft thousand Island drsg so about doubled that. Serving it with cocktail rye but might pick up some rye triscuits per other reviewer's suggestions.

Chicken and Stuffing

Reviewed: Apr. 9, 2006
I have made this many times and we love it. I usually don't add pimentos as I never have them in the house. Also my hubby does not like mushrooms so I omit those but I add extra veggies like carrots or fresh red pepper. I also only use 1/2 to 1/3 of the butter called for for the stuffing and add chicken broth to make 1 cup.

This was just ok--nothing too exciting but I followed the recipe. Seems like most people who loved it made changes.

Chili I

Reviewed: Feb. 26, 2006
The complexity of flavors with the coffee, beer and cocoa is wonderful and rich. I added some chipotle peppers since I didn't have any fresh hot peppers also only added 1/4 cup brown sugar (per other reviewers comments) and it tastes perfect for us.

Beef Stroganoff III

Reviewed: Feb. 19, 2006
I just made this for dinner with leftover pork and beef and it was superb. I did dredge the meat in flour and browned then added onion. Used the white wine to loosen everything from the bottom of the pan then followed the rest of the recipe. We loved it and it's so simple!

Chicken and Corn Chili

Reviewed: Jan. 22, 2006
Didn't pull out the slow cooker as I only had some pre-grilled frozen chicken breast slices. I put it all in my large dutch oven and added some fresh yellow, red and poblano peppers. Also added a can of chili ready tomato. Served with Shredded white sharp cheddar and minced vidahlia onion--very good!

Cha Cha's White Chicken Chili

Reviewed: Jan. 22, 2006
This was delicious! I added some jalapeno's from the jar and only 1/2 teaspoon cayenne and it was spiced right for us. Also used a little Wondra flour to thicken it up a bit. Served this with long grain rice and it was perfect. Can't wait to make this again--YUM!

Butternut Squash Soup II

Reviewed: Jan. 15, 2006
Just made this on a chilly winter day and it was delicious. I left out the potato since I didn't have any in the house but I added an acorn squash instead. Also spiced things up with about 1 tblsp each of madras curry powder, garam masala and some curry paste. Just mashed this with the potato masher and thickened with a little wondra flour--richly yummy without all that fat.

As other reviewers have noted---these were dry!!! I did make a dipping sauce and that makes them palatable but I won't be making these again.

Best Cream Of Broccoli Soup

Reviewed: Oct. 30, 2005
I have made this multiple times and it's always terrific. USE BUTTER. I keep mine in the freezer and chop/slice off what I need with a good knife. I have used vidahlia, green and regular old onion and combos thereof---it's always yummy! today I thought I'd be smart and add some shredded parmesan romano---nope, does not enhance the flavor and I pulled out the lumps of cheese with my whisk. I also use the immersion blender and leave some good chunkiness as well. I have made a vegetarian version by using veggie broth/stock with excellent results as long as you use that butter. fresh and wonderful.

Just made this for a quick lunch and hubby loved it. I added finely diced celery and used low fat mayo--deelish. The dill and paprika did not overpower the egg. Will definitely make this again!

Garlic Croutons

Reviewed: Oct. 15, 2005
I am updating my review on 02/23/2008. What I have been doing lately is using the Italian Butter recipe on this site when making these croutons and it is delicious. Use 1 T of Italian butter instead of herbs and garlic. Super! I have made these wonderful croutons several times now and they are always delicious! I use about 3/4 parts olive oil and 1/4 part Smart Balance Margarine. I use garlic powder and dried italian herbs---superb!

I made this for a co-worker's birthday today and everyone is raving! Per other reviewer's comments I used only 1 cup of sugar and I used lite Sour Cream and Lite Cool Whip--and no one can tell the difference. Really a treat. Will definitely make this again.
