Maple Salmon

Definitely follow the recommendations of marinating and cooking in foil for 20 minutes then under the broiler for 4 or 5 minutes to caramelize the sauce on the salmon. I also added fresh ginger to the sauce recipe. After the salmon was cooked I also put the remaining sauce in a sauce pan and cooked it and added corn starch to thicken the sauce and served it over the salmon.

I had to use a 3 quart casserole dish. There was no way to fit it in a 1.5 quart dish. This recipe needs some more flavor besides salt and parmesan cheese. I think next time I would use some other herbs and saute all of the vegetables, not just the eggplant and garlic.

Crab Crusted Grouper

I don't cook fish at home very often because I can never get it to taste like it does in the restaurant. Well, this recipe changes everything. This was the best tasting fish meal that I have ever had, including all of the restaurant meals. I did salt and pepper the fish before topping with crab mixture. I used asiago and cheddar cheese as my cheeses. I would cook it a little longer because the thicker part of the fillet was a little raw. That's my fault because I checked for flakiness on the edge. Excellent recipe and very easy.
