Cranberry Upside-Down Coffee Cake

Oatmeal Pie IV

This is a charming little keeper! Melt the butter in a glass mixing bowl, then add the Karo, brown sugar, coconut, and oatmeal before the eggs. This way your eggs won't come into direct contact with the melted butter. I added 1/4 t salt, used a hand mixer just because, and covered the crust with a pie shield after 30-35 minutes. This is easy to transport, too. Thanks for posting!

Coconut Orange Cupcakes

The coconut topping was delicious, but the cupcake itself didn't have much flavor. I will try the coconut-sugar mixture on top of other batters, though.

Banana Pudding IV

This was delicious. I hope everyone knows to thoroughly soften the cream cheese before proceeding. I used the entire box of vanilla wafers like other reviewers suggested. The layers were: 1/2 box wafers, bananas, 1/2 the pudding, remaining wafers, remaining pudding, reserved Cool Whip. I also used my mini chopper to chop/grind 6-8 vanilla wafers and sprinkled them on top of the Cool Whip. It looked so pretty!

Pecan Pie Muffins

These are chewy and rich and wonderful with a cup of coffee. I used melted Land O' Lakes margarine and coarsely chopped the pecans. My mini muffin tin is dark metal, so I used a 325F oven and 15 minutes baking time. I used a cookie scoop to plop the batter in the tins. Easy and fast!

Annie's Fruit Salsa and Cinnamon Chips

This was really good! I coarsely chopped the salsa ingredients using my blender's chopper attachment, and the texture was just right. I used frozen raspberries rather than expensive fresh berries and was happy with the results. Also, I'll cut back on the sugar next time. I don't think we'll miss it. The Archer Farm's Cinnamon Sugar Tortilla Chips from Target are easier than making them homemade and are really good!

Pumpkin Cake III

This is excellent. I made the recipe using 2 1/2 teaspoons cinnamon and omitting the nuts. Also, you can dump the eggs, oil, sugar, pumpkin, and vanilla in a large mixing bowl and combine right from the start. I got 34 cupcakes from this recipe using a muffin scoop (3 T) for perfect, uniform results. Dark muffin pans, 325F, 18-19 minutes, cool in pan for 5 minutes. Frost with homemade cream cheese frosting. I dare you to eat just one!

Easy Pancakes

I made these exactly as written. The batter was a puffy mound that didn't cook through completely. I gently spread the batter on the second batch so they would cook through, but the taste was very bland.

Warm Flourless Chocolate Cake with Caramel Sauce

I made this according to the recipe but skipped the caramel sauce and served it warm with vanilla ice cream. We thought it was average. I'd stick to brownies or chocolate cake with chocolate frosting. For someone intolerant to wheat, this might be a real treat, though.

Blueberry Kuchen

We thought this kuchen/coffee cake was delicious. I used 2 teaspoons of lemon juice rather than the zest and stirred 1/2 teaspoon cinnamon into the crumb topping rather than using nutmeg in the batter. My kuchen only took 30 minutes to bake, as others have noted. Also, whenever I make a streusel or crumb topping, I make that first and refrigerate it. It's easier to work with.

Apple Pie Muffins

I added 1 t. cinnamon to the batter like other reviewers suggested and used 1/2 t. cinnamon in the topping. It was the right amount for our tastes. I got 18 standard size muffins rather than 12, and there was still plenty of streusel.

Francisco's Blender Salsa

My son Steve used this recipe for a sixth grade math project, and we made it for his class. It was a huge hit! He snipped off the cilantro leaves to measure 1/4 cup rather than use an entire bunch, and we found it to be just the right amount. No need to mince the cilantro or dice the onion since the blender does all the work for you.

Slow Cooker Chicken Taco Soup

This soup was very easy and very good! I used one heaping tablespoon of dried minced onion and a can of reduced sodium chicken broth in place of the beer. I also drained and rinsed the black beans and used reduced sodium taco seasoning. The soup has plenty of zip, and you won't miss the extra salt at all.

Graham Streusel Coffee Cake

This is our favorite coffee cake. It's wonderful! I make the topping (with or without pecans or walnuts) the night before and refrigerate it to speed preparation the next morning, microwaving it for 20 seconds to make for easier sprinkling. I also bake several in 10x15 pans for Meals on Wheels and PTO meetings, using just one layer of batter and topping it with 3/4 of the struesel. Everyone really, really loves this recipe.

Sour Cream Refrigerator Mashed Potatoes

Favorite new recipe of 2003! I added 1/3 cup milk and the 1/4 cup butter listed to the potatoes, then generously drizzled with melted butter before baking. Topped with finely chopped precooked bacon to serve with turkey, left the bacon off when serving with ham or beef. Love the convenience of making ahead, too.
