Easy Swedish Pancakes

I made two batches. The first was chunky and way too thick but tasted fine. The second was perfect! Be sure to mix the batter well with fully melted butter, and make sure to pour a THIN layer onto the griddle. They should be about as thin as a quarter.

Raspberry Almond Coffeecake

I will make this again! In place of 1 c. white flour, I used 1/2 c. white and 1/2 c. wh. wheat. Also, I had to use frozen raspberries, which I defrosted in the microwave and then mixed with a little bit of whole wheat flour to absorb any moisture. Very easy recipe for coffeecake.

Sauteed Apples

Great recipe! I used 6 small apples and left the skin on for color and vitamins. Also, some comments suggested using vanilla extract. I didn't have any, so I added a capful each of Bailey's and butterscotch schnappes with the cinnamon and brown sugar. This is a great summer alternative to baked apples.

Simple Baked Apples

This recipe is easy and works great exactly as written or with changes. I've made it 5 or 6 times. Tonight, I was out of milk and raisins. I used whole wheat flour. Also, I have found that the walnuts turn out crunchier if sprinkled over the top rather than mixed in. Per other reviewer suggestions, I like to use vanilla extract in the mix. I was out of vanilla tonight, so I used butterscotch schnappes. Very good!

Hazelnut Crumb Coffee Cake

I made this coffee cake this morning, and it was excellent! I love what the sour cream does for the flavor and texture. I did use walnuts instead of hazelnuts because the grocery store didn't carry hazelnuts. Also, I substituted 1/3 cup of whole wheat flour for part of the regular flour. I'll definitely make this again!
