Banana Pumpkin Bread

I did alter the recipe a bit but it turned out FANTASTIC!!! I made jumbo muffins stuffed with cream cheese. I swear...I will never eat another store bought muffin again! Changes I made were: applesauce for oil, half honey half maple syrup (I ran out), didn't have pumpkin pie spice so used allspice, nutmeg and cloves and used 1/2 c. oats for the flour. Sooo good and will definitely make again. **also these do not need a paper cup as it will stick...just grease the muffin pan**

Pumpkin Pancakes

Amazing! My syrup didn't turn out quite thick enough but it still tastes really good. We made a double batch and froze the rest so we could eat them during the week. My husband said every time he ate them it was like they were fresh from the pan! He microwaved them for 30 seconds and then put them in the toaster. DELICIOUS!

Poppy Seed Mini Muffins

Though I did alter a couple things, I thought this was a fabulous recipe. Extremely moist and perfectly lemony! I did half AP flour and half WW flour. I also used the advice of another reviewer and added 1/4 c. of ground flaxseed for additional nutritional content. Didn't have any lemon extract on hand so i used the juice and grated peel of one lemon. I threw in a heaping tsp or so of cinnamon. Also just because my husband has been saying how much he was craving a filled muffin, I added little cubes of cream cheese...pushed right in the center after filling up the muffin pan. Perfect!

Middle Eastern Rice with Black Beans and Chickpeas

SOOOOO GOOD!!!! I used heaping measurements but that was the only change. Delicious! I serve with a lemon and cilantro spiked sour cream (rarely have plain yogurt on hand) and my husband can't get enough. He likes to wrap them up in corn tortillas. I'm a vegetarian so for my version I used Morning Star Farms crumbles and cooked in a no beef broth and added a little cumin. This recipe is on permanent rotation in my house!

Zucchini Yogurt Multigrain Muffins

Made these for my little boy (14 month old) who is a picky eater. As suggested, I cut the sugar in half-down to a half a cup. He didn't even know he was eating such a healthy muffin! Thank you and we will make these again...now if only I can keep them away from my husband next time.

Basic Crepes

Followed recipe exactly except that I mixed the eggs and milk and slowly whisked in the flour. Then added the water and butter. First time around my batter was a little lumpy and this fixed the problem but still had the same end result...perfect crepes!

Roasted Butternut Squash and Garlic Lasagna

This is out of this world delicious! I did do a few things different. As other readers said, I quickly dipped the noodles in simmering water before placing them in the dish. I also added one large onion to the garlic mixture, sprinkle of nutmeg and dash of basil. Didn't think the nutmeg or the basil really made that big of a difference. I short on regular parmesan but did have an italian mix (mozzarella and parmesan) on hand which i used. I also had some leftover ricotta that I used up on the last creamy layer. This recipe is definite keeper! Next time I'm thinking about adding either roasted corn or a layer of spinach...

Slow Cooker Carnitas

I didn't cook in the oven as some reviews have suggested. Husband says it was too dry that way but he can't get enough of it straight out of the pot. We serve it with corn tortillas, spanish rice and beans. Delicious!

Pumpkin Black Bean Soup

Overall recipe is a winner! I did add some coriander, cumin and a little chili powder for extra kick (why i only gave 4 stars). I also only puree 1.5 cans as I like my soups to have a little texture. A great way to use up some leftover pumpkin from Halloween!

Delicious Ham and Potato Soup

I'm a vegetarian but I just made this for my husband and he loved it! Next time around I think I might blend a little bit of the ham and potato mixture to get a thicker consistency. We did add a little bit of a corn and parsley for color. Will def try again.

Smothered Mexican Lasagna

This recipe is truly amazing! Of course, I did some variations. I browned about half of the turkey weight with onions and added zucchini but still used the full taco season packet. My husband couldn't stop raving about this. It has a permanent spot on our menu. Don't skip the salsa cream. I also used yellow corn tortillas because they were the only thing on hand and I think they helped make this dish. Happy cooking!
