Though I did alter a couple things, I thought this was a fabulous recipe. Extremely moist and perfectly lemony! I did half AP flour and half WW flour. I also used the advice of another reviewer and added 1/4 c. of ground flaxseed for additional nutritional content. Didn't have any lemon extract on hand so i used the juice and grated peel of one lemon. I threw in a heaping tsp or so of cinnamon. Also just because my husband has been saying how much he was craving a filled muffin, I added little cubes of cream cheese...pushed right in the center after filling up the muffin pan. Perfect!
