Stuffed Peppers

I love this recipe. It is requested often in my home and that's saying a lot considering there are 3 finicky children to please. I don't even measure out the sauce anymore, I have used this enough to eyeball it. We like them topped with provel cheese added during the last 1 minutes of cooking so that it gets brown and bubbly. Sometimes we mix ground beef and sage pork sausage for extra flavor in the meat. Can't go wrong with this one!

Banana Crumb Muffins

This one is a keeper. Great banana flavor. I added nutmeg, allspice, extra cinnamon, chopped pecans and vanilla. I think I used 4-5 large bananas that I had in the freezer. I also omitted the crumb topping based on some of the reviews that said it went soft after a couple days. This made about 20 average sized muffins. I will fill the cups more next time. I was surprised these didn't rise very much, but they are very moist and delicious.

Chinese Spicy Hot And Sour Soup

What a yummy recipe! I doubled the chicken stock and seasonings because it seemed heavy with vegetables as written. I also added matchstick carrots with the mushrooms and bamboo as that is how we like hot and sour soup. This recipe had great flavor and great heat! I will make this again.

Creamy Macaroni and Cheese

Best Marinara Sauce Yet

Oh, I liked this recipe. I made changes based on what I had on hand. I used italian seasoning in place of all the herbs listed and garlic powder in place of minced garlic. (Basically the same, right?) I also did not use white wine, but a half cup of pasta water blended with the tomato mixture instead. Finally, I added about a cup of chopped yellow squash for an added health kick. This was a tasty sauce and I didn't have to add sugar at all. I let it simmer for a short time, and then served with chicken parm. Very good!

Easy Parmesan Crusted Chicken

This was easy to make, tasty and quick too! I will make this again. I didn't have a problem with it being too dry or too greasy. We put it on top of spaghetti and marinara for an easy chicken parm meal.

Pumpkin Bread IV

This recipe turned out very well, good flavor and easy to make. Sometimes we even make it into large muffins for a quick and easy breakfast snack. I did add a whole large can of pumpkin which comes out to about 4 cups instead of three and I add rehydrated raisins too. I just soak the raisins in water until they plump up and they stay chewy in the bread. Good stuff.

Chicken Pot Pie II

My family and I love this pot pie recipe. It's a great way to use up leftover rotisserie chicken, and we have most of the ingredients on hand in the freezer. Sometimes we make individual pies in medium ramekins and other times we make a large one for the whole family. Either way it turns out very well. Nice recipe!

Cajun Chicken Pasta

Oh this recipe is definitely a keeper. Made it the way the recipe stated to except I cut the chicken into strips first, tossed with the cajun seasoning and a little olive oil then baked in the oven just until it was no longer pink. Then I put the chicken into the skillet and followed the rest of the recipe. This made the chicken very juicy and flavorful with the spice cooked through. This was so good! We served it with garlic bread and a dinner salad. Next time I will try to make the sauce a little thicker but that's just personal preference and didn't affect the flavor or our enjoyment of it at all.

Curried Chicken with Mango Rice

I can't give this 5 stars because I changed it. I followed the first step of the recipe and put the chicken in the oven to bake. I only used chicken broth (no wine) with the rice and cooked it stovetop with the brown sugar and parsley. When the chicken was almost done, I added ginger, a dash of garlic powder, mango and sliced peaches to the chicken. Then I let the fruit warm slightly to blend the flavors. Served it over the rice with a dash of red pepper flake. Very tasty!

Strawberry Oatmeal Breakfast Smoothie

This smoothie is good for quick breakfasts especially in the winter before going to work. If it sets too long though the oatmeal clumps a bit. Stir as you drink!

Crustless Spinach Quiche

This was delicious when we had breakfast for dinner one night. Left out the cheese because we didn't have any and used Tone's chicken base and minced garlic when sauteeing the veggies before adding them into the egg mixture. Also used fresh baby spinach instead of frozen. I just wilted it a bit before adding it. My gf thought it was the best she ever tasted.

Peach Tea

This tea was delicious. I added a little extra peach flavor by putting the skin and pit in boiling water before adding the tea bags then straining it all once it cooled. How refreshing and delicious it was! I blended the peaches until smooth in the blender and added the puree to the tea. Can't go wrong with this one.

Brown Rice

Love this recipe, it's the only way I will make rice now, brown grain or white grain rice. I usually use brown because it's healthier for us and in the oven with the foil sealing in all the steam it comes out moist every time!

Great Garlic Bread

This recipe was wonderful! I used an Italian herb loaf from the local grocery and then followed the rest of the recipe. The kids gobbled it up and asked for more. Will definitely make often.

Cheesy Vegetable Lasagna

This is a wonderful recipe. Sometimes I use fresh spinach and steam it first in place of the frozen. I also add garlic powder to the ricotta mixture for extra flavor, but I like garlic a lot! Anyhow, can't go wrong with this one. Next time I plan to top with fresh tomatoes like a bruschetta when it comes out of the oven. Yum!
