Easy Pumpkin Muffins
Just made this the other day. Wow, super moist and no eggs. I did change it up just a bit because I was concerned about the thickness. I added some water maybe about 1/3 cup and used evaporated milk 1/3 or little more. I used pumpkin spice,all spice, and vanilla. I wish I would have used more of pumpkin and add cinnamon. I didn't make cup cakes rather 2 smaller cakes and used creamy vanilla frosting BIG HIT!!!!!! I'm going to make this one again today!

Pumpkin Bread
Made this yesterday before Hurricane Sandy came. I cut the recipe in half for one loaf. I used a bunt pan cooked for 45 minutes. I used 1 cup suger and no baking powder. I aslo added dry yellow cake mix on the top then saturated that with melted butter. It came out amazing and super moist! I highly recommend it. Almost forgot I didn't use cloves or allspice. Still Fab-U my husband inhaled it!

Soft Oatmeal Cookies
I just made them with a small revision of 1/2 cup suger, 1/2 cup brown suger , 1 tsp of cinnamon, and 3/4 cup of semi-sweet chocolate chips. They came out amazing! I did 9 minutes and very important walnut size on the pan. They came out light and tasty.
