Lemon Lentil Salad

This was awesome! I would have given it 5 stars but as written the lentils are cooked too long! I have made a few changes based on what i had on hand. I used maple syrup (used half as much) instead of sugar and dried parsley in the dressing. Also I added 1/4C or so of cilantro chopped up for freshness, as that was what i had. So good!

Frozen Peppermint Cheesecake

I made two of these for a church dessert night. It got rave reviews! I added crushed candy canes into the cake, I think that added that special touch!

Awesome and Easy Creamy Corn Casserole

This was really good! I couldnt find corn bread mix so used a stove top stuffing mix instead! I also added some onion for extra flavor! This was a great idea! I made it for Christmas dinner!

Excellet recipie! They stay soft even after a few days! They taste alot like a brownie. You don't have to refrigerate the dough!

Peppered Bacon and Tomato Linguine

This was sooo yummy! I used 3 large bulbs of garlic, and a 28oz can of diced tomatoes and lots of fresh basil, cause i had it. There was lots of sauce using the larger can of tomatoes. I let it reduce down longer than it says in the recipe. Very simple to make! It got great reviews by my parents who 'happened' to be around. I will definitly make this again!

Broccoli and Tortellini Salad

Good tasting salad. I didn't like all the sunflower seeds, I would cut that in half, as well as the raisins. Found it needed a bit more dressing then the recipe called for. So I used a 1/4cup more mayo and a little more viniger.

Sweet Potato Gnocchi

I loved these! I used 2 med size yams. I ended up using almost 4 cups of flour that's part of what i used on the board to roll out the dough (really it was more like streaching it out). It was sticky but i did knead it a bit longer adding a bit more flour each time. I did try it with alittle brown sugar about 2 tbs and some cinnimon, as recomend by some others. I also tossed them with some evoo when the came out of the pot. I served it with a mushroom alfreado sause(bought) and some baked chicken breast. I would totally make this for company! fyi: They freeze well, not quite as pretty looking, but oh so tasty. (froze with sauce and chicken)
