Vegetarian Chickpea Sandwich Filling

I liked the idea of this right away, but I'm not crazy about beans right out of the can. I tossed the beans in olive oil, added salt, pepper, garlic powder and chilli powder and threw it in the oven with some frozen miripoix and let it bake for 20 mins at 400, stirring twice or so. I pulled it out of the oven and stirred in 2 tbs of light mayo (didn't mash) and filled a warm pita. Very, very delicious. Very, very satisfying.

Vegetable Cheese Bake

I really enjoyed this dish. I made a cheese sauce using half chicken stock and threw in some dry mustard and Old Bay seasoning along with about 1 1/2 cups cheddar. The still- frozen veggies were in the baking dish, and I poured the sauce over and stirred lightly. Then I sprinkled some panko bread crumbs on top. Darn tasty!

Baked Chicken Nuggets

I loved this recipe. I used panko bread crumbs (way less additives- check out the ingredients in regular bread crumbs) and marinated the chicken in buttermilk and garlic prior to breading. After baking I sprinkled them with more parmesean and dipped them in marinara. Thanks for this great recipe- sure to be a standby for me!

Simple Turkey Chili

Ha! This was crazy-easy and perfect on a cold night. I was starving, and started making this before I took off my coat! I used frozen, diced veg (onion, celery, green pepper, and carrot) and the canned tomato products I had on hand (one small can of sauce, one reg. can of diced and one reg. can of diced tomatoes/sauce for chili which I think I bought on accident, but happy to have it). So tasty and satisfying. I served mine with a sprinkling of shredded cheddar/jack cheese. Yay!

Raspberry Oat Bars

I was looking for an oatmeal cookie with a jammy filling so I varied from the original just a bit: I threw in two eggs after creaming the butter/sugar and some vanilla. After blending the dry, I got a nice cookie batter. I spread 3/4 of the batter in an 8X8 square pan, which I greased and lined with parchment, then spread my jam (cherry, raspberry, blackberry) then dropped the remaining batter overtop in spoonfuls. I spread the dollops the best I could, and popped it in the oven @ 350 for 22 mins. Absolutely DELISH!

Best Big, Fat, Chewy Chocolate Chip Cookie

So, I just took the last batch out of the oven and they are fat as promised and have a pretty sheen. I used a combination of semi-sweet & peanut butter chips and refrigerated the dough until firm as another reviewer suggested. This recipe delivered. Thanks for this recipe!!

Maria's Stuffed Chicken Breasts

Delicious!! I made these with just a few alterations, namely seasoning (salt, pepper, crushed garlic, dried oregano, basil). I also pounded the chicken, and since I didn't have any ricotta I just used spinach, egg and shredded italian blend cheese. I also used a combo of jarred roasted garlic sauce and a small can of tomato sauce- fabulous. It made a rich tomato gravy. This recipe will become a staple in my cooking repetoire.

Blonde Brownies I

These are just delicious. I made the recipe as directed, but used peanut butter/milk chocolate swirled chips and just sprinkled them on top. They had a great flavor- almost like caramel. Next time I will definitely double the recipe- they were gone too quickly!
