Hearty Split Pea Soup

made this exactly as directed and found that the taste was great but it was way thicker than soup. Will definitely take other reviewer's advice and add more liquid next time, maybe subbing chicken broth for the water. My husband liked it enough for two servings and took some to work for lunch the next day :)

Easy Curry Couscous

Delicious! I did not add salt as I knew the chicken broth would be too salty for our liking but aside from that I followed the recipe exactly and it was delicious!! Perfect with the Spanish Moroccan Fish recipe I found here on AR. Thanks for sharing!

Spanish Moroccan Fish

Had to modify slightly based on what I had in my cupboard but this was delicious! Tasted just like the Moroccan dishes in the restaurants where I used to dance. Was a huge hit with my husband and 18-month-old and got us talking about the "good old days" :) Thank you for sharing!

Squash-Apple Bake

I made this for thanksgiving last year and was pleasantly surprised to find that even after cooking more servings than I thought we needed there were no leftovers. It's been requested again this year by almost everyone! I don't think I changed anything except maybe using pumpkin pie spice as I didn't have mace.

Tasty Tuna Pasta

Hubby liked it pretty well. Only had Alfredo sauce with sun dried tomatoes (which already had the oregano, basil and garlic in it, so I didn't add more) and it still turned out pretty tasty. Super quick and easy, perfect for a week night.

Spinach and Rice Alfredo

This recipe looks amazing, but I had to change it a bit based on what I had in my cupboard. Hubby still raved! Here's what I changed: cooked the rice in chicken broth with a teeny bit of garlic; less butter in sauce; whole milk in place of whipping cream; 3/4 cup of shredded parmesan; added about 2 tablespoons of cream cheese; nearly an entire bag of frozen spinach, thawed, then drained on paper towels so it wouldn't be soggy. My husband and 2 yr old wanted to eat all of it before I managed to get it to the table! Thank you Diana for this fabulous base recipe!

Chicken Pot Pie IX

Love this one! My husband asks for it often. On busy nights I throw in whatever frozen veggies I have on hand it's still great. I usually pre-bake the bottom crust for 10-15 mins to keep it crom getting soggy. Thanks for sharing this recipe!

Rosemary Roasted Turkey

Wonderful! Used this recipe to cook my very first Thanksgiving turkey several years ago and fortunately/unfortunately it was a hit so I'm on turkey duty for every holiday in the foreseeable future :)

Greek Penne and Chicken

The only substitutions I had to make were to use sun dried tomatoes and leftover shredded chicken because that's what I had and this was delicious! My husband and 3yr old loved it, too. Considering using sun dried tomatoes again next time and adding the feta at the very last minute before serving.

Mediterranean Puff Pastry Chicken

I followed the recipe exactly and it was wonderful. The chicken was incredibly tender! The only trouble I had was with the puff pastry but I suspect it was my inexperience with the pastry rather than the recipe. Next time I might add more spinach and some garlic before baking and do a little less pesto, just to adjust to my family's taste. Not our new favorite but I will definitely make this again. Thanks for sharing!
