Pecan Pie V
This pie is outstanding. I have always loved pecan pie but I'd never tried making my own until now. I was hesitant to try this "zero corn syrup" version but I am SO glad I went ahead with it. If anything, I think I like it better than the traditional recipe pecan pies. I added 1/2 cup chocolate chips and some additional pecans. The pie looked beautiful and tasted amazing. This was really easy to throw together and I WILL be making it again... Probably sooner rather than later!

Sweet Potato, Carrot, Apple, and Red Lentil Soup
Followed the recipe nearly to a T with the one exception that I had green lentils on hand instead of red. Very very impressed with this soup. The flavor is just amazing. Not normally a fan of cumin but it is perfect in this dish. I might try adding just a squeeze of lemon to it to brighten it up a bit next time.

Bacon Water Chestnut Rolls
After assembling the rolls I gave each one a good sprinkling of fresh ground black pepper. I also added black pepper & garlic powder to the sauce. I cooked the rolls for 30 minutes earlier in the day drained the fat then put a dollop of sauce on each one and refrigerated them until 1/2 an hour before the party - at which point I cooked them for the remaining 30 minutes. These were a HUGE HIT. They dissapeared within 20 minutes of the party starting. I doubled the recipe this time around, next time I will quadruple it. I also put a dish of extra sauce on the side for dipping - something I definitely recommend because that sauce is DELICIOUS!
