Blueberry Oat Muffins

I rated it 5 stars b/c I didn't want to lower the rating based on adjustments I made. I used slpenda instead of sugar and applesauce instead of oil (as other reviewers did) and they were not good at all. Which is confusing to me b/c others seemed to like them w/ those adustments. I ended up making a vanilla glaze and covering them in it just to make them edible. Which of course defeated the whole purpose of using applesauce and splenda. :) My mistake! I will know better next time I guess.

Sesame Beef

This is AMAZING! Tasted even better than most beef entrees at the Chinese buffets! The only thing I did different is used splenda in place of the sugar and as other people mentioned, I doubled the sauce and used one batch of sauce to cook the meat in and one batch for the veggies and then added it all together. YUM!!! I will make this over and over again!

Ginger-Lime Chicken with Coconut Rice

This is a great 'idea' for a recipe. It definitely needed something for color as other reviewers stated so I added cilantro, and red & green peppers. This recipe also goes great with curry so I added a little at the end. I used 1 cup of coconut milk and 3/4 cup water as to cut down on fat and b/c another reviewer said her rice was too gooey from all the milk. I used brown rice so I had to keep adding more liquid until my rice reached the desired tenderness. I also used only one lime and at the end mixed the rice with the chicken since the rice alone is very bland. I also added salt and pepper to my own before I ate it. Very unique and I like the end result!

Baked Ziti I

This was amazing!! We couldn't stop eating it. Don't listen to the other reviews that say to use ricotta instead of sour cream. If you want a Ziti recipe that uses ricotta there are plenty on here. The sour cream is what makes this recipe! The only changes I made were that I used ground turkey instead of beef and whole wheat noodles and a mixture of fat free and light sour cream and just used the cheese I had on hand which were mozzarella and muenster. I would give this 10 stars if I could!! Oh I also mixed the sauce with the bottom layer of noodles as another reviewer suggested and I did cover it while I bakes it.

It's Chili by George!!

This is a great chili recipe! I always vary it with whatever ingredients I have on hand but I always follow the spices exactly and it never fails me! Have gotten lots of compliments on this.

Amy's Cilantro Cream Sauce

I followed this exactly and I found it to be way too salty and overbearing. MAybe I had bad spices. I don't know b/c nobody else mentioned having this problem. I added another 4 o of cream cheese and it's still too overbearing. I'm going to buy sour cream and once I add more I'm hoping it'll mellow out b/c it seems like such a great recipe. Next time I'll half the spices

Chicken Continental

I used 8 oz of mushrooms and cream of mushroom soup since it's all I had and it was really good! I also cooked my rice in a rice cooker and omitted the water in the pan and then just served the chicken on top of the rice w/the sauce. Yummy!

Scallop Scampi

I followed the ingredients to this pretty closely and it was delicious. I never really measure things exactly so that's why I say ingredients. I used a little dried basil and parsley since I didn't have fresh parsley and I used a little lemon juice as well for just a little extra kick. Good recipe! Oh I also used fresh mushrooms as well!
